INGREDIENTS


Varan Bhaat

Servings - 2 - 3

INGREDIENTS

Split pigeon peas - 150 grams
Water - 500 milliliters
Tomato - 50 grams
Salt - 1/2 teaspoon
Turmeric - 1/4 teaspoon
Water - 450 milliliters
Ghee - 2 tablespoons
Mustard seeds - 1/2 teaspoon
Cumin seeds - 1/2 teaspoon
Asafoetida - 1/4 teaspoon
Curry leaves - 8 - 10
Green chili - 2
Coriander - 1 tablespoon
Rice - 200 grams
Water - 2.5 litres, divided
Salt - 1/2 teaspoon
Oil - 1 teaspoon

PREPARATION


1. In a bowl, add 150 grams split pigeon peas, 500 milliliters water and soak for 1 hour.
2. Take a pressure cooker, add the soaked dal, 50 grams tomato, 1/2 teaspoon salt, 1/4 teaspoon turmeric, 450 milliliters water and mix it well.
3. Cover it with lid and cook until you hear 4 - 5 whistles.
4. Open the lid and give it a nice stir.
5. Remove it from heat and keep aside.
6. Heat 2 tablespoons ghee in a pan, add 1/2 teaspoon mustard seeds, 1/2 teaspoon cumin seeds, 1/4 teaspoon asafoetida and stir well.
7. Add 8 - 10 curry leaves, 2 green chili and stir for 2 - 3 minutes.
8. Remove it from heat and transfer this into the pressure cooker and mix it well.
9. Cook for 5 - 7 minutes on medium heat.
10. Add 1 tablespoon coriander and mix it well.
11. Remove it from heat and keep aside.
12. In a bowl, add 200 grams rice, 500 milliliters water and wash it properly.
13. Strain the rice properly and transfer this into a bowl, add 500 milliliters water and soak for 30 minutes.
14. Take a heavy skillet, add 1.5 litres water, 1/2 teaspoon salt, 1 teaspoon oil, soaked rice and mix it well.
15. Bring it to a boil.
16. Boil for 15 - 20 minutes on medium heat.
17. Remove it from heat and drain the rice.
18. Serve with prepared saran chaat.
