Eggless Honey Cake

INGREDIENTS
Condensed milk - 340 milliliters
Orange juice - 110 milliliters
Oil - 110 milliliters
Sugar - 50 grams
Lemon juice - 1 teaspoon
Vanilla extract - 1 teaspoon
All purpose flour - 160 grams
Baking powder - 1 tablespoon
Baking soda - 1/2 teaspoon
Orange zest - 1/2 teaspoon
Oil - for brushing
Water - 100 milliliters
Sugar - 2 tablespoons
Honey - 100 milliliters
Fruit jam - 100 grams
Sugar - 1 teaspoon
Desiccated coconut - for garnishing

 

PREPARATION


1. In a mixing bowl, add 340 milliliters condensed milk, 110 milliliters orange juice, 110 milliliters oil, 50 grams sugar, 1 teaspoon lemon juice, 1 teaspoon vanilla extract and mix it well.
2. Add 160 grams all purpose flour, 1 tablespoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon orange zest and mix it well again.
3. Transfer to a baking tray greased with oil and dusted with all purpose flour.
4. Preheat the oven to 350°F/180°C. Bake for 30 minutes or until the top is golden brown.
5. Add 100 milliliters water, 2 tablespoons sugar and stir until the sugar dissolves. Add 100 milliliters honey and mix it well. Bring it to a boil.
6. Add 100 grams fruit jam, 1 teaspoon sugar in a pan and cook on low heat until it melts.
7. Prick the cake with tooth pick at various places.
8. Pour the prepared syrup generously so that the cake absorbs the syrup. Over this, spread the jam to form a thin layer.
9. Sprinkle desiccated coconut all over the surface to cover up the jam.
10. Cut it into desired shape.
11. Serve.
