Masala Gud Bajra Roti 

Servings - 4

INGREDIENTS
Jaggery - 200 grams
Water - 300 milliliters
Fennel seeds - 1 teaspoon
Ginger powder - 1/2 teaspoon
Black salt - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Pearl millet flour - 160 grams 
Whole wheat flour - 160 grams 
Desiccated coconut - 40 grams 
Pearl millet flour - for dusting 
White sesame seeds - 40 grams 
Ghee - 50 milliliters

PREPARATION


1. In a pan, add 200 grams jaggery and 300 milliliters water. Stir continuously over low heat until the jaggery dissolves completely. 
2. Add 1 teaspoon fennel seeds, 1/2 teaspoon ginger powder, and 1/4 teaspoon black salt. Stir and bring the mixture to a boil.
3. Remove from heat and transfer to a bowl. Add 160 grams pearl millet flour, 160 grams whole wheat flour, and 40 grams desiccated coconut. Mix well to form a dough. Let the dough rest for 10 minutes.
4. After resting, divide the dough into balls. Dust with pearl millet flour, flatten each ball, sprinkle white sesame seeds on both sides, and roll into a roti.
5. Heat a pan and place the roti on it. Cook for 1–2 minutes, flip, and brush ghee on the cooked side. Flip again, brush ghee, and cook until both sides are golden brown.
6. Serve hot.
