 Homemade Sweet Boondi

Servings - 4 - 5

INGREDIENTS

(For Sugar Syrup)

Sugar - 240 grams

Water - 110 milliliters

Cardamom powder - 1/4 teaspoon

Organic food color (Saffron) - 1/4 teaspoon

(For Sweet Boondi)

Gram flour - 120 grams

Water - 120 milliliters

Oil - 1 1/2 tablespoons

Oil - for frying

PREPARATION

(For Sugar Syrup)

1. Take a pan, add 240 grams sugar, 110 milliliters water, 1/4 teaspoon cardamom powder and stir continuously until the sugar is fully dissolved.

2. Bring it to a boil. Add 1/4 teaspoon organic food color (Saffron) and stir well.

3. Bring it to a boil again. Keep aside.

(Rest of the Preparation)

1. In bowl, add 120 grams gram flour, 120 milliliters water and mix it well.

2. Add 1 1/2 tablespoons oil and mix it well again.

3. Heat sufficient oil in a heavy skillet.

4. Pour 3 to 4 tablespoons of the batter at a time over a large round perforated spoon (boondi jhara) so that boondi drops in the oil.

5. Deep fry the boondi over a medium heat and remove using a slotted spoon and

6. Put them in the warm sugar syrup which we prepared and mix well.

7. Soak for 6 - 8 hours.

8. Serve.
