 Baked Vada Pav

INGREDIENTS

Warm water - 50 milliliters

Yeast - 1 teaspoon

Sugar - 2 teaspoons

All purpose flour - 250 grams

Salt - 1 teaspoon

Milk - 50 milliliters

Water - 50 milliliters

Butter - 1 tablespoon

Oil - 2 tablespoons

Mustard seeds - 1/4 teaspoon

Curry leaves - 5 - 6

Green chili - 1 teaspoon

Ginger paste - 1/2 teaspoon

Turmeric - 1/4 teaspoon

Boiled mashed potatoes - 380 grams

Red chili - 1/4 teaspoon

Coriander powder - 1/4 teaspoon

Salt - 1 teaspoon

Chaat masala - 1/4 teaspoon

Garlic cloves - 60 grams

Paprika - 3 tablespoons

Dry mango powder - 1 tablespoon

Salt - 1 tablespoon

Water - 2 tablespoons

Butter

PREPARATION

1. In a mixing bowl, add 50 milliliters warm water, 1 teaspoon yeast, 2 teaspoons sugar and mix it well.

2. Add 250 grams all purpose flour, 1 teaspoon salt, 50 milliliters milk, 50 milliliters water and knead it into a smooth soft dough.

3. Add 1 tablespoon butter and tuck the dough well till smooth.

4. Rest the dough for 45 minutes.

5. Heat 2 tablespoons oil in a pan, add 1/4 teaspoon mustard seeds, 5 - 6 curry leaves, 1 teaspoon green chili, 1/2 teaspoon ginger paste and saute for a minute.

6. Add 1/4 teaspoon turmeric and stir well.

7. Now, add 380 grams boiled mashed potatoes, 1/4 teaspoon red chili, 1/4 teaspoon coriander powder, 1 teaspoon salt, 1/4 teaspoon chaat masala and mix all the ingredients well.

8. Cook for 3 - 5 minutes.

9. In a bowl, add 60 grams garlic cloves, 3 tablespoons paprika, 1 tablespoon dry mango powder, 1 tablespoon salt, 2 tablespoons water and blend it into a paste.

10. Take a small amount of potato mixture and flatten them. Add garlic paste at the centre and make a ball out of it.

11. Do the same with rest of the mixture.

12. Take a medium sized ball from dough and make a circle.

13. Place the prepared ball in it.

14. Now fold it in half, pinch the edges shut and then bring the corners under and roll to make a ball.

15. Transfer them into a greased baking tray.

16. Brush them with butter and rest for 30 minutes. Again brush them with butter.

17. Preheat the oven to 350°F/180°C. Bake for 15 - 20 minutes.

18. Remove it from the oven and brush them with butter again.

19. Cut it into half.

20. Serve.
