INGREDIENTS
All purpose flour - 75 grams
Corn flour - 35 grams
Salt - 1 teaspoon
White pepper - 1/2 teaspoon
Soy sauce - 1 teaspoon
Water - 180 milliliters
Cauliflower - 300 grams
Oil - for frying
Oil - 2 tablespoons
Ginger - 1 teaspoon
Green chili - 1 teaspoon
Celery - 40 grams
Bell pepper - 70 grams
Carrot - 40 grams
Salt - 1/2 teaspoon
Black pepper - 1 teaspoon
White pepper - 1/2 teaspoon
Soy sauce - 1 tablespoon
Ketchup - 1 tablespoon
Red chili sauce - 1 teaspoon
Green chili sauce - 1 teaspoon
Vinegar - 1 tablespoon
Sugar - 1 teaspoon
Corn flour - 1 tablespoon
Water - 110 milliliters
Spring onions - for garnishing
PREPARATION
1. In a mixing bowl, add 75 grams all purpose flour, 35 grams corn flour, 1 teaspoon salt, 1/2 teaspoon white pepper, 1 teaspoon soy sauce, 180 milliliters water and mix it well to make a thick batter.
2. Take a cauliflower floret and dip it in the batter.
3. Heat sufficient oil in a heavy skillet and fry the cauliflower for 3 - 5 minutes. Transfer this into a plate. Cool for 2 minutes.
4. Again deep fry them until they turn golden brown in color.
5. Drain it on an absorbent paper. Keep aside.
6. Heat 2 tablespoons oil in a pan, add 1 teaspoon ginger, 1 teaspoon green chili and saute for 2 - 3 minutes.
7. Add 40 grams celery, 70 grams bell pepper, 40 grams carrot and mix well.
8. Cook for 5 - 7 minutes.
9. Then, add 1/2 teaspoons salt, 1 teaspoon black pepper, 1/2 teaspoon white pepper, 1 tablespoon soy sauce, 1 tablespoon ketchup, 1 teaspoon red chili sauce, 1 teaspoon green chili sauce and mix it well.
10. Add 1 teaspoon vinegar and mix it again.
11. Now, add the fried cauliflowers in it and toss them well.
12. Add 1 teaspoon sugar and stir well.
13. In a bowl, add 1 tablespoon corn flour, 110 milliliters water and mix it well. Pour this into the pan and stir well.
14. Cook for 2 minutes.
15. Garnish with spring onions.
16. Serve hot.
