Spicy Schezwan Gobi

Servings - 2 - 3

INGREDIENTS

Water - 1 litre

Cauliflower - 450 grams

Salt - 1/2 teaspoon

Oil - 1 tablespoon

Garlic - 1 tablespoon

Ginger - 1 tablespoon

Onions - 135 grams

Spring onions - 70 grams

Green chili - 1 tablespoon

Salt - 1/2 teaspoon

Soy sauce - 1 1/4 tablespoons

Red chilli sauce - 1 1/2 tablespoons

Schezwan sauce - 1 tablespoon

Vinegar - 1 tablespoon

Corn flour - 1 tablespoon

Water - 3 tablespoons

Sesame seeds - for garnishing

Spring onions - for garnishing

PREPARATION

1. Heat 1 litre water in a pot, add 450 grams cauliflower, 1/2 teaspoon salt and mix it well.

2. Bring it to a boil. Remove from heat and strain them well. Keep aside.

3. Heat 1 tablespoon oil in a pan, add 1 tablespoon garlic, 1 tablespoon ginger and saute for 2 - 3 minutes.

4. Add 135 grams onions, 70 grams spring onions and fry till translucent.

5. Then, add 1 tablespoon green chili, 1/2 teaspoon salt and mix it well.

6. Now, add the boiled cauliflower, 1 1/4 tablespoons soy sauce, 1 1/2 tablespoons red chilli sauce, 1 tablespoon schezwan sauce, 1 tablespoon vinegar and mix it well.

7. In a bowl, add 1 tablespoon corn flour, 3 tablespoons water and mix it well. Pour this mixture into the pan.

8. Mix it well. Cook for 5 - 7 minutes.

9. Garnish with sesame seeds and spring onions.

10. Serve hot.
