Suji Cheese Balls 

Servings - 4

INGREDIENTS
Boiled green peas - 60 grams 
Ginger - 1 tablespoon
Green chili - 1 tablespoon
Water - 80 milliliters
Oil - 1 tablespoon
Sesame seeds - 1 teaspoon
Chilli flakes - 1 teaspoon
Oregano - 1 teaspoon
Water - 250 milliliters
Semolina - 80 grams 
Salt - 1 teaspoon
Boiled mashed potatoes - 100 grams 
Mozzarella cheese - 60 grams 
Oil - for frying
Peri peri masala - 1 teaspoon

PREPARATION


1. In a blender, add 60 grams boiled green peas, 1 tablespoon ginger, 1 tablespoon green chili, and 80 milliliters water. Blend until smooth and keep aside.
2. Heat 1 tablespoon oil in a skillet. Add 1 teaspoon sesame seeds, 1 teaspoon chilli flakes, and 1 teaspoon oregano. Sauté for few seconds.
3. Add the blended mixture and cook for 1 - 2 minutes.
4. Add 250 milliliters water, 80 grams semolina, and 1 teaspoon salt. Cook for 8–10 minutes until the mixture thickens.
5. Remove from heat and let the mixture cool for 10 minutes.
6. Once cooled, add 100 grams boiled mashed potatoes and mix well to combine.
7. Take a small portion of the mixture, flatten it with your palms, place a piece of mozzarella cheese in the center, and cover it. Shape into a ball.
8. Heat enough oil in a skillet. Deep fry the prepared balls until golden brown and crispy. Drain on absorbent paper. 
9. Sprinkle 1 teaspoon peri peri masala over the fried balls and toss well to combine.
10. Serve hot with your favourite dip.
