Vegetable Oatmeal Poha
Servings - 3 - 4

 

INGREDIENTS
Flattened rice - 150 grams
Water - 500 milliliters
Oil - 1 tablespoon
Mustard - 1 teaspoon
Onions - 50 grams
Ginger paste - 1 teaspoon
Carrot - 40 grams
Tomato - 50 grams
Oats - 40 grams
Turmeric - 1 teaspoon
Green peas - 50 grams
Green chili - 1 teaspoon
Roasted peanuts - 40 grams
Sugar - 2 teaspoons
Salt - 1/2 teaspoon
Lemon juice - 1 teaspoon

 

PREPARATION


1. Rinse and soak 150 grams flattened rice.
2. Heat 1 tablespoon oil in a heavy skillet, add 1 teaspoon mustard and allow it to crackle.
3. Add 50 grams onions and stir. Add 1 teaspoon ginger paste and saute over medium heat till light brown in color. 
4. Add 40 grams carrot, 50 grams tomato, 40 grams oats, 1 teaspoon turmeric, 50 grams green peas, 1 teaspoon green chili, 40 grams roasted peanuts, 2 teaspoons sugar and stir well to combine.
5. Add the rinsed flattened rice and mix well to combine.
6. Add 1/2 teaspoon salt, 1 teaspoon lemon juice and stir.
7. Cover the pan and cook for 3 - 5 minutes.
8. Serve.
