Caramel Kheer

Servings - 5 - 6

INGREDIENTS
Rice - 60 grams
Water - 250 milliliters
Ghee - 1 tablespoon
Almond - 2 tablespoons
Raisins - 2 tablespoons
Water - 250 milliliters
Sugar - 50 grams
Water - 100 milliliters
Milk - 1 litre
Green cardamom - 2 pods
Sugar - 2 tablespoons
Almonds - for garnishing

PREPARATION


1. In a bowl, add 60 gram rice, 250 milliliters water and soak for 20 minutes.
2. Heat 1 tablespoon ghee in a pan, add 2 tablespoons almonds and roast for 2 - 3 minutes on medium heat.
3. Add 2 tablespoons raisins and roast for another 2 - 3 minutes on medium heat or until it turns golden brown in color.
4. Take a bowl, place a stainer on it.
5. Add the soaked rice in it and wash it with water properly. Keep aside.
6. Take a skillet, add 50 grams sugar and stir continuously until sugar is melted properly.
7. Then, add 100 milliliters water and mix it well.
8. Bring it to a boil.
9. Now, add 1 litre water and mix it well.
10. Bring it to a boil.
11. Add 2 pods green cardamom and mix it well.
12. Cook for about 8 - 10 minutes on medium heat.
13. Then, add the washed rice and mix it well.
14. Bring it to a boil. Boil for about 15 - 20 minutes on medium heat.
15. Add the roasted nuts in it and mix it well.
16. Now, add 2 tablespoons sugar and mix it well.
17. Cook for 10 - 12 minutes on medium heat or until the mixture thickens.
18. Remove it from heat and allow it to cool.
19. Refrigerate for 30 minutes.
20. Garnish with almonds.
21. Serve.
