Carrot Cake

INGREDIENTS


All purpose flour - 300 grams

Powdered sugar - 200 grams

Powdered brown sugar - 200 grams

Baking soda - 1 1/2 teaspoons

Baking powder - 1 teaspoon

Cinnamon powder - 2 teaspoons

Nutmeg powder - 1/2 teaspoon

Vegetable oil - 235 milliliters

Butter - 110 milliliters

Eggs - 4

Vanilla essence - 1 tablespoon

Grated carrots - 340 grams

Walnuts - 80 grams

Butter - 100 grams

Cream cheese - 225 grams

Vanilla essence - 1 teaspoon

Powdered sugar - 500 grams

Walnuts - for garnishing

PREPARATION

1. In a mixing bowl, add 300 grams all purpose flour, 200 grams powdered sugar, 200 grams powdered brown sugar, 1 1/2 teaspoons baking soda, 1 teaspoon baking powder, 2 teaspoons cinnamon powder, 1/2 teaspoon nutmeg powder and mix it well.

2. In a another mixing bowl, add 235 milliliters vegetable oil, 110 milliliters butter and mix it well.

3. Then, add 4 eggs one by one and whisk it well.

4. Add 1 tablespoon vanilla essence and mix it again.

5. Now, add the prepared flour mixture in it and mix it well.

6. Add 340 grams grated carrots, 80 grams walnuts and mix it well.

7. Transfer this mixture into a baking dish.

8. Preheat the oven to 350°F/180°C. Bake for 40 - 45 minutes.

9. Remove it from oven.

10. In a mixing bowl, add 100 grams butter and mix it well.

11. Then, add 225 grams cream cheese, 1 teaspoon vanilla essence and mix it well.

12. Now, add 500 grams powdered sugar and mix it well.

13. Take the cake base and cut it into half.

14. Add the prepared frosting on it and spread it evenly.

15. Then, place the another base of cake and cover it with the prepared frosting.

16. Add some walnuts on it.

17. Refrigerate for 1 hour.

18. Cut it into slices.

19. Serve.
