Crispy Jalebi

INGREDIENTS

All purpose flour - 300 grams
Gram flour - 2 tablespoons
Yogurt - 100 grams
Baking powder - 1/2 teaspoon
Cardamom powder - 1/2 teaspoon
Organic food color - 1/4 teaspoon
Water - 300 milliliters
Sugar - 400 grams
Water - 200 milliliters
Lemon juice - 1 tablespoon
Saffron - 1/4 teaspoon
Cardamom powder - 1/4 teaspoon
Uttam ghee - for frying
Pistachios - for garnishing
PREPARATION
1. In a mixing bowl, add 300 grams all purpose flour, 2 tablespoons gram flour, 100 grams yogurt, 1/2 teaspoon baking powder, 1/2 teaspoon cardamom powder, 1/4 teaspoon organic food color, 300 milliliters water and mix it well to make a thick batter.
2. Rest the batter for 8 - 10 hours.
3. Take a skillet, add 400 grams sugar, 200 milliliters water and stir continuously until the sugar is fully dissolved.
4. Add 1 tablespoon lemon juice, 1/4 teaspoon saffron, 1/4 teaspoon cardamom powder and mix it well.
5. Bring it to a boil.
6. Remove it from heat and keep aside.
7. Take a skillet, add uttam ghee in it.
8. Heat the ghee properly.
9. Pour the batter into a piping bag andsqueeze the piping bag over the oil to make a concentric circles.
10. Fry until it turns golden brown and crispy.
11. Add the fried jalebi into the prepared sugar syrup.
12. Soak for about 7 - 8 minutes.
13. Garnish with pistachios.
14. Serve.
