Fluffiest Yogurt Cake

INGREDIENTS
Egg yolks - 4
Beaten yogurt - 250 grams
All purpose flour - 40 grams
Egg white - 4
Lemon juice - 1 teaspoon
Caster sugar - 80 grams
Water - 250 milliliters
PREPARATION
1. In a bowl, add 4 egg yolks, 250 grams beaten yogurt and whisk well to combine.
2. Add 40 grams all purpose flour and whisk well until smooth. Keep aside.
3. In separate bowl, add 4 egg white, 1 teaspoon lemon juice and whisk until frothy.
4. Add 80 grams caster sugar in two parts, whisking until soft peaks form.
5. Add a small portion of the egg white mixture to the yogurt mixture. Gently fold to combine.
6. Now, add the yogurt mixture back into the remaining egg white mixture and fold gently until well combined.
7. Pour the mixture into cake mould. Place the mould inside a larger baking dish and add 250 milliliters of water to the dish.
8. Preheat the oven to 300°F/150°C and bake for 80 minutes.
9. Remove from the oven and Cool for 30 minutes.
10. Cut into pieces.
11. Serve.
