Gond Halwa

INGREDIENTS
Fox nuts - 30 grams 
Desi ghee - 2 teaspoons
Edible gum - 40 grams 
Almonds - 35 grams 
Walnuts - 35 grams 
Pistachios - 25 grams 
Sunflower seeds - 25 grams 
Desi ghee - 80 milliliters
Milk - 220 milliliters
Jaggery - 150 grams 
Poppy seeds - 2 tablespoons
Ginger powder - 1/4 teaspoon
Cardamom powder - 1/4 teaspoon
Nutmeg powder - 1/8 teaspoon
Almonds - for garnishing

PREPARATION


1. In a pan, add 30 grams fox nuts and dry roast for 2 minutes. Remove from heat and keep aside.
2. Heat 2 teaspoons desi ghee in another pan. Add 40 grams edible gum and roast for 2 - 3 minutes. Remove from heat and keep aside.
3. In a food processor, add the roasted fox nuts, 35 grams almonds, 35 grams walnuts, 25 grams pistachios, and 25 grams sunflower seeds. Grind into a fine powder and keep aside.
4. In a separate food processor, grind the roasted edible gum into a powder.
5. Heat 80 milliliters desi ghee in a skillet. Add the blended dry fruit mixture and cook on low heat for 8–10 minutes.
6. Add the powdered edible gum and stir well.
7. Pour in 220 milliliters milk and cook for 8–10 minutes over medium heat.
8. Add 150 grams jaggery and stir continuously until it dissolves completely.
9. Add 2 tablespoons poppy seeds, 1/4 teaspoon ginger powder, 1/4 teaspoon cardamom powder, and 1/8 teaspoon nutmeg powder. Cook for 10–15 minutes until well combined.
10. Remove from heat and let it cool for 15 minutes.
11. Garnish with chopped almonds.
12. Serve.
