Gulab Jamun Churros

Servings - 8 

INGREDIENTS
Sugar - 300 grams 
Water - 300 milliliters
Cardamom powder - 1/4 teaspoon
Saffron strands - 8 - 10 
Water - 250 milliliters
Butter - 40 grams 
Powdered sugar - 2 tablespoons
Cardamom powder - 1 teaspoon
Rose water - 1 tablespoon
All purpose flour - 160 grams 
Milk powder - 35 grams 
Oil - for frying
Pistachios - for garnishing

PREPARATION


1. In a pan, add 300 grams sugar and 300 milliliters water. Stir continuously until the sugar dissolves.
2. Add 1/4 teaspoon cardamom powder and 8 - 10 saffron strands. Stir for 2 - 3 minutes, then remove from the heat and keep aside.
3. In a separate pan, add 250 milliliters water, 40 grams butter, and 2 tablespoons powdered sugar. Stir over medium heat for 2–3 minutes.
4. Add 1 teaspoon cardamom powder and 1 tablespoon rose water. Mix well.
5. Add 160 grams all purpose flour and 35 grams milk powder. Stir continuously until the mixture forms a dough. Remove from heat.
6. Using a piping bag, pipe the dough into churro shapes onto a butter paper–lined board. Cut to the desired length with scissors.
7. Heat sufficient oil in a skillet. Deep fry the churros until golden brown or crispy.
8. Remove the churros from oil and immediately soak them in the prepared sugar syrup for 5 minutes.
9. Garnish with chopped pistachios.
10. Serve.
