INGREDIENTS


Mango Lemon Bars

Servings - 3 - 4

INGREDIENTS

(For Crust)
All Purpose flour - 300 grams
Powdered sugar - 120 grams
Butter - 160 grams

(For Mango Layer)
Mangoes - 295 grams
Eggs - 4
Powdered sugar - 145 grams
Vanilla extract - 1 teaspoon
Lemon juice - 100 milliliters
All purpose flour - 30 grams
Icing sugar - for dusting

PREPARATION


(For Crust)
1. In a mixing bowl, add all the ingredients and mix it well.
2. Transfer this into a baking dish and spread it evenly.
3. Preheat the oven to 340°F/175°C. Bake for 15 - 20 minutes.
4. Remove it from oven and allow it to cool for about 10 minutes.

(For Mango Layer)
1. In a blender, add 295 grams mangoes and blend it into a puree. Keep aside.
2. In a mixing bowl, add 4 eggs, 145 grams powdered sugar and whisk it well.
3. Add 1 teaspoon vanilla extract, 100 milliliters lemon juice, 30 grams all purpose flour and mix it well to make a thick batter.
4. Then, add the prepared mango puree and mix it again.

(For Mango Lemon Bars)
1. Pour the batter over the crust.
2. Preheat the oven to 340°F/175°C. Bake for 30 - 35 minutes.
3. Remove it from oven and allow it cool for an hour.
4. Cut it into pieces.
5. Dust it with icing sugar.
6. Serve.
