Mango Ukadiche Modak 

Servings - 5

INGREDIENTS
Ghee - 1 tablespoon
Grated fresh coconut - 75 grams 
Mango puree - 120 grams 
Jaggery powder - 30 grams 
Cardamom powder - 1/4 teaspoon
Nutmeg powder - 1/4 teaspoon
Water - 350 milliliters
Mango puree - 130 grams 
Ghee - 2 tablespoons 
Rice flour - 140 grams 
Saffron - 1/2 teaspoon 
Ghee - for garnishing

PREPARATION


1. Heat 1 tablespoon ghee in a pan, add 75 grams grated fresh coconut and cook for 1 - 2 minutes.
2. Add 120 grams mango puree and 30 grams jaggery powder. stir well to combine.
3. Add 1/4 teaspoon cardamom powder, 1/4 teaspoon nutmeg powder and mix well. Cook for 7 - 8 minutes and remove from heat.
4. In a skillet add 350 grams water, add 130 grams mango puree and 2 tablespoons ghee. stirring occasionally.
5. Add 140 grams rice flour, stirring continuously to combine. Cover and cook for 5 minutes.
6. Remove from heat and cool for 30 minutes.
7. Take some flour mixture in your hands and roll it. Place it into a modak mold, making a hole in the center (see video).
8. Fill the hole with the coconut mixture, then cover it. Open the mold and place the modak on a steamer tray.
9. Add some saffron strands on the modak. Cover and steam for 10 minutes.
10. Remove from the steamer and garnish with ghee.
11. Serve.
