Porg Cupcakes

Servings - 3 - 4

INGREDIENTS
All purpose flour - 250 grams
Powdered sugar - 190 grams
Baking powder - 1 teaspoon
Salt - 1/4 teaspoon
Baking soda - 1 teaspoon
Warm water - 240 milliliters
Oil - 120 milliliters
Vinegar - 2 teaspoons
Vanilla extract - 1 teaspoon
Unsalted butter - 100 grams
Icing sugar - 200 grams
Vanilla extract - 1 teaspoon
Cream cheese - 50 grams
Butterscotch crunch
Fondant - for decoration
Coconut - for garnishing

PREPARATION


1. In a mixing bowl, add 250 grams all purpose flour, 190 grams powdered sugar, 1 teaspoon baking powder, 1/4 teaspoon salt, 1 teaspoon baking soda and mix it well.
2. In a another mixing bowl, add 240 milliliters warm water, 120 milliliters oil, 2 teaspoons vinegar, 1 teaspoon vanilla extract and mix it well.
3. Then, add the prepared flour mixture in batches and mix it well to make a thick batter.
4. Divide the batter into cupcake tray.
5. Preheat the oven to 350°F/180°C. Bake for about 30 minutes.
6. Remove it from oven and keep aside.
7. In a mixing bowl, add 100 grams unsalted butter and whisk it well.
8. Now, add 200 grams icing sugar in batches and mix it well.
9. Add 1 teaspoon vanilla extract and mix it well.
10. Add 50 grams cream cheese and mix it again.
11. Take the cupcake and decorate it with prepared frosting.
12. Add some butterscotch crunch on it.
13. Decorate the eyes and mouth with fondant.
14. Sprinkle some coconut on it.
15. Serve.
