Anda Methi Bhurji With Maska Bun

INGREDIENTS
Eggs - 6

Oil - 2 tablespoons

Onions - 140 grams

Tomato - 200 grams

Green chili - 2 teaspoons

Salt - 1 teaspoon

Red chili - 1 teaspoon

Turmeric - 1/2 teaspoon

Coriander powder - 1 teaspoon

Cumin powder - 1 teaspoon

Fenugreek leaves - 120 grams

Buns

Butter - for brushing

 

PREPARATION

  1. In a mixing bowl, add 6 eggs and whisk it well. Keep aside.
  2. Heat 2 tablespoons in a skillet, add 140 grams onions and fry till translucent or until it turns golden brown in color.
  3. Then, add 200 grams tomato and mix it well.
  4. Saute for 5 - 7 minutes on medium heat or until it turns soft and pulpy.
  5. Add 2 teaspoons green chili and mix it well.
  6. Add 1 teaspoon salt, 1 teaspoon red chili, 1/2 teaspoon turmeric, 1 teaspoon coriander powder, 1 teaspoon cumin powder and mix it well.
  7. Cook for 3 - 5 minutes on medium heat.
  8. Now, add 120 grams fenugreek leaves and mix it well.
  9. Cover it with lid and cook for 5 - 7 minutes on medium heat.
  10. Open the lid and give it a nice stir.
  11. Add the whisked eggs in it and mix it well.
  12. Cook for 8 - 10 minutes on medium heat.
  13. Remove it from heat and keep aside.
  14. Take a bun and cut it into half.
  15. Place it on a hot tawa and cook on moderate heat for 2 - 3 minutes.
  16. Place the bun on a board and spared some butter on it.
  17. Cover it with another bun.
  18. Cut it into pieces.
  19. Serve with prepared anda methi bhurji.
