Badami Mutton Curry

Servings - 2 - 3

INGREDIENTS

Mutton - 790 grams
Salt - 1 teaspoon
Ginger garlic paste - 1 tablespoon
Lemon juice - 1 tablespoon
Warm water - 35 milliliters
Saffron - 1/4 teaspoon
Almonds - 100 grams
Water - 470 milliliters, divided
Yogurt - 190 grams
Salt - 1/2 teaspoon
Paprika - 1 teaspoon
Red chili - 1/4 teaspoon
Ghee - 30 milliliters
Oil - 20 milliliters
Bay leaf - 1
Cinnamon stick - 1
Black peppercorns - 1/4 teaspoon
Cloves - 1/4 teaspoon
Green cardamom - 4 pods
Cumin - 1 teaspoon
Ginger - 2 teaspoons
Garlic - 2 teaspoons
Green chili - 1 teaspoon
Onions - 190 grams
Turmeric - 1/4 teaspoon
Water - 500 milliliters
Coriander - 2 tablespoons
Almonds - for garnishing

PREPARATION


1. In a mixing bowl, add 790 grams mutton, 1 teaspoon salt, 1 tablespoon ginger garlic paste, 1 tablespoon lemon juice and mix it well.
2. Marinate for 1 hour.
3. In a bowl, add 35 milliliters warm water, 1/4 teaspoon saffron and mix it well.
4. Soak for 30 minutes.
5. In a another bowl, add 100 grams almonds, 250 milliliters water and soak for over night.
6. Peel the skin of the almonds and transfer this into a blender.
7. Add 220 milliliters water and blend it into a paste.
8. In a mixing bowl, add 190 grams yogurt, soaked saffron water, 1/2 teaspoon salt, 1 teaspoon paprika, 1/4 teaspoon red chili and mix it well. Keep aside.
9. Heat 30 milliliters ghee, 20 milliliters oil in a heavy skillet, add 1 bay leaf, 1 cinnamon stick, 1/4 teaspoon black peppercorns, 1/4 teaspoon cloves, 4 pods green cardamom, 1 teaspoon cumin and stir well.
10. Add 2 teaspoons ginger, 2 teaspoons garlic, 1 teaspoon green chili and stir for 2 - 3 minutes.
11. Then, add 190 grams onions and fry till translucent or until it turns golden brown in color.
12. Now, add the marinated mutton and mix it well.
13. Cover it with lid and cook for about 30 minutes on medium heat.
14. Open the lid and give it a nice stir.
15. Add 1/4 teaspoon turmeric and stir well.
16. Then, add the yogurt mixture and mix it well.
17. Add 500 milliliters water and mix it again.
18. Cover it with lid and cook for about 35 - 40 minutes on medium heat.
19. Open the lid and give it a nice stir.
20. Now, add the blended almonds and mix it well.
21. Again cover it with lid and cook for about 15 minutes on medium heat.
22. Open the lid and give it a nice stir.
23. Add 2 tablespoons coriander and mix it well.
24. Cook for another 3 - 5 minutes on medium heat.
25. Remove it from heat.
26. Garnish with almonds.
27. Serve hot.
