Chicken Ball Clear Soup

INGREDIENTS

Minced chicken - 450 grams

Eggs - 2

Bread crumbs - 40 grams

Corn flour - 2 tablespoons

Salt - 1/2 teaspoon

Black pepper - 1/4 teaspoon

Oil - for shallow frying

Oil - 1 1/2 teaspoons

Bay leaf - 1

Cinnamon stick - 1

Garlic - 1 tablespoon

Ginger - 1 1/2 teaspoons

Onions - 65 grams

Green beans - 90 grams

Carrots - 35 grams

Bell pepper - 1 tablespoon

Chicken stock - 1 litre

Salt - 1 teaspoon

Black pepper - 1/4 teaspoon

Broccoli - 45 grams

Water - 500 milliliters

Spring onions - 2 tablespoons

 

PREPARATION

  1. In a bowl, add 450 grams minced chicken, 2 eggs, 40 grams bread crumbs, 2 tablespoons corn flour, 1/2 teaspoon salt, 1/4 teaspoon black pepper and mix it well.
  2. Take some mixture in your hands and shape it into a ball.
  3. Heat sufficient oil in a pan, add the prepared ball in it.
  4. Cover it with lid and cook for about 5 - 7 minutes on medium heat.
  5. Open the lid and give it a nice stir.
  6. Again cover it with lid and cook for about 5 - 7 minutes on medium heat.
  7. Open the lid and remove it from heat.
  8. Heat 1 1/2 teaspoons oil in a heavy skillet, add 1 bay leaf, 1 cinnamon stick, 1 tablespoon garlic, 1 1/2 teaspoons ginger and stir for 1 - 2 minutes.
  9. Then, add 65 grams onions and fry till translucent or until it turns golden brown in color.
  10. Now, add 90 grams green beans, 35 grams carrots, 1 tablespoon bell pepper and mix it well.
  11. Cook for 5 - 7 minutes on medium heat.
  12. Add 1 litre chicken stock and mix it well.
  13. Add 1 teaspoon salt, 1/4 teaspoon black pepper, 45 grams broccoli, 500 milliliters water and mix it well.
  14. Bring it to a boil.
  15. Now, add the fried chicken balls in it and mix it well.
  16. Cook for 5 - 7 minutes on medium heat.
  17. Add 2 tablespoons spring onions and mix it well.
  18. Remove it from heat.
  19. Serve hot.
