INGREDIENTS
Boneless mutton - 700 grams
Salt - 1 teaspoon
Paprika - 1 teaspoon
Ginger garlic paste - 1 teaspoon
Yogurt - 50 grams
Bottle gourd - 300 grams
Oil - 3 tablespoons, divided
Green cardamom - 2 pods
Cloves - 2 pods
Cinnamon stick - 1
Cumin - 1 teaspoon
Bay leaf - 1
Ginger - 2 teaspoons
Garlic - 2 teaspoons
Green chili - 1 teaspoon
Onions - 100 grams
Tomato puree - 200 grams
Turmeric - 1/4 teaspoon
Salt - 1/2 teaspoon
Red chili - 1 teaspoon
Coriander powder - 1 teaspoon
Paprika - 1/4 teaspoon
Water - 350 milliliters
Garam masala - 1/2 teaspoon
Coriander - 1 tablespoon
PREPARATION
1. In a mixing bowl, add 700 grams boneless mutton, 1 teaspoon salt, 1 teaspoon paprika, 1 teaspoon ginger garlic paste, 50 grams yogurt and mix it well.
2. Marinate for 1 hour.
3. Take 300 grams bottle gourd and cut it into pieces. Keep aside.
4. Heat 1 tablespoon oil in a heavy skillet, add the marinated mutton in it and mix it well.
5. Cover it with lid and cook for about 8 - 10 minutes on medium heat.
6. Open the lid and give it a nice stir.
7. Cook for another 8 - 10 minutes on medium heat.
8. Remove it from heat and keep aside.
9. Heat 2 tablespoons oil in a heavy skillet, add 2 pods green cardamom, 2 pods cloves, 1 cinnamon stick, 1 teaspoon cumin, 1 bay leaf and stir well.
10. Add 2 teaspoons ginger, 2 teaspoons garlic and stir again.
11. Then, add 1 teaspoon green chili, 100 grams onions and fry till translucent or until it turns golden brown in color.
12. Now, add 200 grams tomato puree and mix it well.
13. Cook for 5 - 7 minutes on medium heat.
14. Add 1/4 teaspoon turmeric and mix it well.
15. Then, add the cooked mutton in it and mix it well.
16. Cook for 5 - 7 minutes on medium heat.
17. Now, add 300 grams bottle gourd and mix it well.
18. Add 1/2 teaspoon salt, 1 teaspoon red chili, 1 teaspoon coriander powder, 1/4 teaspoon paprika and mix it well.
19. Add 350 milliliters water and mix it well.
20. Cover it with lid and cook for about 20 - 25 minutes on medium heat.
21. Open the lid and give it a nice stir.
22. Add 1/2 teaspoon garam masala, 1 tablespoon coriander and mix it well.
23. Cook for 3 - 5 minutes on medium heat.
24. Remove it from heat.
25. Garnish with coriander.
26. Serve hot.
