Litti Chicken

INGREDIENTS
(For Dough)
Wheat flour - 300 grams
Baking soda - 1/4 teaspoon
Salt - 1 teaspoon
Carom seeds - 1/2 teaspoon
Ghee - 50 milliliters
Water - 150 milliliters

(For Stuffing)
Sattu flour - 150 grams
Ginger garlic paste - 1 1/2 teaspoons
Green chili - 1 teaspoon
Coriander - 1 tablespoon
Cumin - 1 teaspoon
Black salt - 1/2 teaspoon
Salt - 1/2 teaspoon
Achari masala - 1 1/2 tablespoons
Mustard oil - 35 milliliters
Lemon juice - 15 milliliters
Water - 45 milliliters

(For Chicken)
Chicken - 500 grams
Salt - 1 teaspoon
Red chili - 1/2 teaspoon
Turmeric - 1/8 teaspoon
Oil - 35 milliliters
Bay leaf - 1
Dry red chili - 2
Black cardamom - 1 pod
Cinnamon stick - 1
Black peppercorns - 1/4 teaspoon
Cumin - 1 teaspoon
Ginger - 1 1/2 teaspoons
Green chili - 1 teaspoon
Onions - 130 grams
Tomato - 100 grams
Turmeric - 1/2 teaspoon
Salt - 1/2 teaspoon
Red chili - 1 teaspoon
Coriander powder - 1 1/2 teaspoons
Chicken masala - 1 teaspoon
Kitchen king masala - 1 teaspoon
Water - 700 milliliters
Garam masala - 1 teaspoon
Coriander - 1 tablespoon
Ghee - for brushing & dipping

PREPARATION


(For Dough)
1. In a mixing bowl, add all the ingredients except water and mix it well.
2. Add 150 milliliters water and knead it into a smooth soft dough.
3. Rest the dough for 30 minutes.

(For Stuffing)
1. In a mixing bowl, add all the ingredients except lemon juice and water.
2. Mix it well.
3. Then, add 15 milliliters lemon juice, 45 milliliters water and mix it well.
4. Keep aside.

(For Chicken)
1. In a mixing bowl, add 500 grams chicken, 1 teaspoon salt, 1/2 teaspoon red chili, 1/8 teaspoon turmeric and mix it well.
2. Marinate for 30 minutes.
3. Heat 35 milliliters oil in a skillet, add 1 bay leaf, 2 dry red chili, 1 pod black cardamom, 1 cinnamon stick, 1/4 teaspoon black peppercorns, 1 teaspoon cumin and stir well.
4. Add 1 1/2 teaspoons ginger, 1 teaspoon green chili and stir for 1 - 2 minutes.
5. Then, add 130 grams onions and fry till translucent or until it turns golden brown in color.
6. Now, add the marinated chicken and mix it well.
7. Cook for 5 - 7 minutes on medium heat.
8. Add 100 grams tomato and mix it well.
9. Cook for another 5 - 7 minutes on medium heat.
10. Add 1/2 teaspoon turmeric and stir well.
11. Add 1/2 teaspoon salt, 1 teaspoon red chili, 1 1/2 teaspoons coriander powder, 1 teaspoon chicken masala, 1 teaspoon kitchen king masala and mix it well.
12. Cook for 3 - 5 minutes on medium heat.
13. Then, add 700 milliliters water and mix it well.
14. Bring it to a boil.
15. Cover it with lid and cook for about 12 - 15 minutes on medium heat.
16. Open the lid and give it a nice stir.
17. Add 1 teaspoon garam masala and mix it well.
18. Add 1 tablespoon coriander and mix it again.
19. Cook for 3 - 5 minutes on medium heat.
20. Remove it from heat and keep aside.

(For Litti)
1. Take a ball from dough and flatten it with the help of your fingers.
2. Add the prepared stuffing in it and roll it into a ball.
3. Place it on a griller and grill for 2 - 3 minutes and flip it to the other sides.
4. Brush it with ghee.
5. Grill from all the sides or until it turns dark brown in color.
6. Remove it from griller and dip it in ghee.
7. Serve with prepared chicken.
