Mango Salsa Chicken Skewers

INGREDIENTS
(For Chicken Skewers)

Mangoes - 200 grams
Coconut milk - 400 milliliters
Garlic cloves - 2
Sriracha sauce - 50 grams
Honey - 2 tablespoons
Lemon juice - 1 tablespoon
Salt - 1 teaspoon
Black pepper - 1/4 teaspoon
Boneless chicken - 600 grams
Olive oil - 2 tablespoons
Coriander - 1 tablespoon
Olive oil - for grilling

(For Mango Salsa)
Mangoes - 280 grams
Bell pepper - 70 grams
Onions - 50 grams
Green onions - 1 tablespoon
Jalapeños - 1 tablespoon
Lemon zest - 1 teaspoon
Coriander - 1 tablespoon
Lemon juice - 2 tablespoons

PREPARATION


(For Chicken Skewers)
1. In a blender, add 200 grams mangoes, 400 milliliters coconut milk, 2 garlic cloves, 50 grams sriracha sauce, 2 tablespoons honey, 1 tablespoon lemon juice, 1 teaspoon salt, 1/4 teaspoon black pepper and blend it into a puree.
2. Transfer this into a mixing bowl, add 600 grams boneless chicken, 2 tablespoons olive oil, 1 tablespoon coriander and mix it well.
3. Marinate for 1 hour.
4. Soak skewers in water for 30 minutes.
5. Skewer the chicken in it.
6. Heat some olive oil in a grill pan and place the skewers on it.
7. Grill until it turns golden brown in color from all sides.
8. Remove it from grill pan. Keep aside.

(For Mango Salsa)
1. In a mixing bowl, add all the ingredients and mix it well.
2. Serve with prepared chicken.
