INGREDIENTS
Hot water - 1.5 litres
Mutton paya - 435 grams
Oil - 60 milliliters
Black cardamom - 1 pod
Cinnamon sticks - 2
Cloves - 5 pods
Ginger garlic paste - 1 teaspoon
Green chili - 1 tablespoon
Onions - 290 grams
Turmeric - 1/2 teaspoon
Red chili - 1 teaspoon
Salt - 1 teaspoon
Coriander powder - 1 teaspoon
Tomato puree - 150 grams
Water - 700 milliliters
Garam masala - 1/2 teaspoon
Coriander - for garnishing
PREPARATION
1. In a bowl, add 1.5 litres hot water, add 435 grams mutton paya and wash them well. (If there are hair on mutton pieces then you have to boil them, otherwise you can wash them with hot water)
2. Heat 60 milliliters oil in a pot, add 1 pod black cardamom, 2 cinnamon sticks, 5 pods cloves, 1 teaspoon ginger garlic paste and saute for 2 - 3 minutes.
3. Add 1 tablespoon green chili and stir well.
4. Now, add 290 grams onions and fry till it turns golden brown in color.
5. Add 1/2 teaspoon turmeric, 1 teaspoon red chili, 1 teaspoon salt, 1 teaspoon coriander powder and mix it well.
6. Then, add 150 grams tomato puree and mix it well. Cook for 3 - 5 minutes.
7. Add the washed mutton paya in it and mix it well.
8. Now, add 700 milliliters water and stir well.
9. Cover it with lid and cook till your hear 3 whistles on high heat and then low the heat.
10. Cook on low heat till you hear 8 whistles.
11. Add 1/2 teaspoon garam masala and mix it well.
12. Garnish with coriander.
13. Serve hot.
