Curd - 150 grams
Kosher salt - 1 teaspoon
Paprika - 2 teaspoons
Turmeric - 1 teaspoon
Cumin powder - 1 teaspoon
Coriander powder - 1 teaspoon
Garam masala - 1 teaspoon
Garlic - 1 teaspoon
Ginger - 1 teaspoon
U.S. turkey - 720 grams
Oil - 2 tablespoons
Bay leaf - 1
Green cardamom - 2 pods
Onions - 110 grams
Garlic - 1 tablespoon
Ginger - 1 tablespoon
Crushed tomato - 370 grams
Tomato paste - 2 tablespoons
Green chili - 1 tablespoon
Kosher salt - 1 teaspoon
Paprika - 1 teaspoon
Garam masala - 1/2 teaspoon
Chilli flakes - 1/2 teaspoon
Heavy cream - 200 milliliters
Coriander - 2 tablespoons
Lemon juice - 1 tablespoon
PREPARATION
1. In a mixing bowl, add 150 grams curd, 1 teaspoon kosher salt, 2 teaspoons paprika, 1 teaspoon turmeric, 1 teaspoon cumin powder, 1 teaspoon coriander powder, 1 teaspoon garam masala, 1 teaspoon garlic, 1 teaspoon ginger and mix it well.
2. Add 720 grams u.s. turkey and mix it well.
3. Marinate for 4 hours.
4. Soak skewers in water for 30 minutes.
5. Skewer the chicken pieces in it.
6. Place it on a baking tray.
7. Preheat the oven to 350°F/180°C. Bake for 45 - 50 minutes.
8. Remove it from oven.
9. Heat 2 tablespoons oil in a heavy skillet, add 1 bay leaf, 2 pods green cardamom and stir well.
10. Then, add 110 grams onions and fry till translucent or until it turns golden brown in color.
11. Add 1 tablespoon garlic, 1 tablespoon ginger and mix it well.
12. Now, add 370 grams crushed tomato, 2 tablespoons tomato paste, 1 tablespoon green chili and mix it well.
13. Cook for 5 - 7 minutes on medium heat.
14. Remove it from heat and allow it to cool.
15. Transfer this into a blender and blend it into a puree.
16. Transfer this into a heavy skillet and stir well.
17. Add 1 teaspoon kosher salt, 1 teaspoon paprika, 1/2 teaspoon garam masala, 1/2 teaspoon chilli flakes and mix it well.
18. Then, add 200 milliliters heavy cream and mix it well.
19. Cook for 5 - 7 minutes on medium heat.
20. Now, add the baked turkey in it and mix it well.
21. Add 2 tablespoons coriander, 1 tablespoon lemon juice and mix it well.
22. Cook for another 3 - 5 minutes on medium heat.
23. Remove it from heat.
24. Garnish with coriander.
25. Serve hot with rice.
