PREPARATION
1. In a mixing bowl, add 200 grams semolina, 90 grams rice flour, 1/2 teaspoon salt and mixi well.
2. Add 250 milliliters water and mix it well to make a thick batter.
3. Rest the batter for 15 minutes.
4. Heat 2 teaspoons oil in a skillet, add 90 grams onions and fry till translucent or until it turns golden brown in color.
5. Then, add 240 grams bell pepper and mix it well.
6. Cook for 5 - 7 minutes on medium heat.
7. Now, add 90 grams tomato and saute until it turns soft and pulpy.
8. Cook for 3 - 5 minutes on medium heat.
9. Add 1/2 teaspoon salt, 1/4 teaspoon black pepper and mix it well.
10. Remove it from heat and keep aside.
11. Heat 1 teaspoon oil in a pan, add the prepared batter on it and spread it evenly.
12. Cook on moderate heat for 2 - 3 minutes and then flip it gently.
13. Cook for another 2 - 3 minutes and flip it again.
14. Then, add the prepared topping on it and spread it evenly.
15. Add some black olives on it.
16. Now, add some mozzarella cheese on top of it.
17. Sprinkle some oregano and chilli flakes on it.
18. Cover it with lid and cook for 3 - 5 minutes on medium heat or until the cheese is melted.
19. Open the lid and remove it from heat.
20. Serve hot.
