Achari Samosa

INGREDIENTS
(For Stuffing)

Boiled mashed potatoes - 1 kilogram
Onions - 100 grams
Green peas - 150 grams
Paneer - 150 grams
Garlic - 2 tablespoons
Ginger - 2 tablespoons
Green chili - 2 tablespoons
Dry fenugreek leaves - 2 tablespoons
Coriander seeds - 1 tablespoon
Salt - 2 teaspoons
Red chili - 1 teaspoon
Turmeric - 1 teaspoon
Black pepper powder - 1 teaspoon
Cumin powder - 1 teaspoon
Coriander - 2 tablespoons
Carom seeds - 1/2 teaspoon
Achari masala - 60 grams

(For Dough)
All purpose flour - 300 grams
Salt - 1 teaspoon
Caroms seeds - 1/2 teaspoon
Water - 200 milliliters
Oil - for frying

PREPARATION


(For Stuffing)
1. In a mixing bowl, add all the ingredients and mix it well.
2. Keep aside.

(For Dough)
1. In a mixing bowl, add 300 grams all purpose flour, 1 teaspoon salt, 1/2 teaspoon carom seeds and mix it well.
2. Add 200 milliliters water and knead it into a smooth soft dough.
3. Res the dough for a hour.

(Rest of the Preparation)
1. Take a ball from dough and flatten it with the help of a rolling pin.
2. Cut it into half.
3. Brush the edge with water.
4. Make a cone of it.
5. Now, add the prepared stuffing in it and seal the edges properly.
6. Heat sufficient oil in a heavy skillet and deep fry these until it turns golden brown and crispy.
7. Remove it from heat and drain it on an absorbent paper.
8. Serve hot with ketchup.

Striped Aloo Samosa

Servings - 3 - 4

INGREDIENTS
Wheat flour - 250 grams
Salt - 1/2 teaspoon
Carom seeds - 1/4 teaspoon
Ghee - 60 grams
Water - 120 milliliters
Oil - 2 tablespoons
Cumin - 1/2 teaspoon
Coriander - 1 teaspoon
Turmeric - 1/4 teaspoon
Ginger paste - 1 teaspoon
Green chili - 1 1/2 tablespoons
Green peas - 90 grams
Boiled potatoes - 350 grams
Garam masala - 1/4 teaspoon
Red chili - 1/4 teaspoon
Dry mango powder - 1/4 teaspoon
Salt - 1/2 teaspoon
Coriander - 2 tablespoons
