Aloo Lachha Paratha

INGREDIENTS
Potatoes - 500 grams

Water - 950 milliliters

Onions - 100 grams

Green chili - 1 teaspoon

Ginger garlic paste - 1 1/2 teaspoons

Salt - 1 teaspoon

Black salt - 1/4 teaspoon

Dry mango powder - 1 teaspoon

Red chili - 1 teaspoon

Cumin powder - 1 teaspoon

Garam masala - 1 teaspoon

Pomegranate seeds powder - 1 teaspoon

Carom seeds - 1 teaspoon

Cumin seeds - 1 teaspoon

Mint - 1 tablespoon

Coriander - 2 tablespoons

Wheat flour - 300 grams

Salt - 1 teaspoon

Carom seeds - 1/2 teaspoon

Oil - 30 milliliters

Water - 200 milliliters

Ghee - for brushing

 

PREPARATION

  1. In a pressure cooker, add 500 grams potatoes, 950 milliliters water and cover it with lid.
  2. Cook until you hear 2 whistles.
  3. Open the lid and remove it from heat.
  4. Peel the skin and transfer this into a bowl.
  5. Mash the potatoes with the help of a food masher.
  6. Add 100 grams onions, 1 teaspoon green chili, 1 1/2 teaspoons ginger garlic paste, 1 teaspoon salt, 1/4 teaspoon black salt, 1 teaspoon dry mango powder, 1 teaspoon red chili, 1 teaspoon cumin powder, 1 teaspoon garam masala, 1 teaspoon pomegranate seeds powder, 1 teaspoon carom seeds, 1 teaspoon cumin seeds, 1 tablespoon mint, 2 tablespoons coriander and mix all the ingredients well.
  7. In a mixing bowl, add 300 grams wheat flour, 1 teaspoon salt, 1/2 teaspoon carom seeds, 30 milliliters oil, 200 milliliters water and knead it into a smooth soft dough.
  8. Rest the dough for 20 minutes.
  9. Take a ball from dough and dust it with flour.
  10. Flatten it with the help of a rolling pin.
  11. Add some prepared stuffing on it and spread it evenly.
  12. Brush it with butter.
  13. Roll it into a cylindrical shape and brush it with butter.
  14. Roll it into a circular shape and dust it with flour.
  15. Flatten it with the help of a rolling pin.
  16. Place it on a hot tawa and cook on moderate heat for 2 - 3 minutes.
  17. Flip it gently and brush it with ghee.
  18. Flip it again and brush the other side too.
  19. Cook until it turns golden brown in color from both sides.
  20. Remove it from heat.
  21. Serve hot.
