Aloo Paneer Bird Nest

Servings - 2 - 3

INGREDIENTS

Water - 300 milliliters

Potatoes - 415 grams

Salt - 1/2 teaspoon

All purpose flour - 60 grams

Water - 100 milliliters

Green peas - 100 grams

Bell pepper - 85 grams

Garlic - 2 teaspoons

Ginger - 2 teaspoons

Green chili - 2 teaspoons

Red chili - 1 teaspoon

Turmeric - 1/2 teaspoon

Salt - 1 teaspoon

Coriander - 2 teaspoons

Grated paneer - 100 grams

Vermicelli

Grated paneer - 100 grams

Salt - 1/2 teaspoon

Black pepper - 1/2 teaspoon

Corn starch - 1 tablespoon

Oil - for frying

Onions - 100 grams

Mint leaves - 15 grams

Green chili - 1 tablespoon

Sugar - 1 tablespoon

Salt - 1/2 teaspoon

PREPARATION

1. Take a pressure cooker, add 300 milliliters water, 415 grams potatoes, 1.2 teaspoon salt and cover it with lid.

2. Cook till you hear 3 - 4 whistles.

3. Remove it from heat. Drain and peel the potatoes.

4. In a mixing bowl, add 60 grams all purpose flour, 100 mililiters water and mix it well. Keep aside.

5. In a another mixing bowl, add the boiled potatoes and mash them with the help of a food masher.

6. Add 100 grams green peas and mash it again.

7. Then, add 85 grams bell pepper, 2 teaspoons garlic, 2 teaspoons ginger, 2 teaspoons green chili, 1 teaspoon red chili, 1/2 teaspoon turmeric, 1 teaspoon salt, 2 teaspoons coriander and mix all the ingredients well.

8. Now, add 100 grams grated paneer and mix it well.

9. Take some mixture in your hands and shape it into a nest. (See Video)

10. Dip it in all purpose flour paste and add vermicelli on it. So, its look like bird’s nest.

11. Refrigerate for 15 minutes.

12. In a mixing bowl, add 100 gram grated paneer, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1 tablespoon corn starch and mix it well.

13. Take some mixture in your hand and shape it into small balls like eggs. (See Video)

14. Heat sufficient oil in a skillet and deep fry these until golden brown and crispy.

15. Drain it on an absorbent paper. Keep aside.

16. Now, deep the prepared nest until it turns golden brown and crispy.

17. Drain it on an absorbent paper and keep aside.

18. In a blender, add 100 grams onions, 15 grams mint, 1 tablespoon green chili, 1 tablespoon sugar, 1/2 teaspoon salt and blend it into a smooth paste.

19. Take the bird nets and spread the prepared cut nye on it.

20. Add some coriander.

21. Now, add the prepared eggs on it.

22. Serve hot.
