Baked Tofu Pita Wrap

INGREDIENTS

All purpose flour - 280 grams

Sugar - 1 tablespoon

Salt - 1 teaspoon

Baking powder - 1/4 teaspoon

Baking soda - 1 teaspoon

Curd - 30 grams

Water - 60 milliliters

Oil - 1 tablespoon

Coriander - 20 grams

Green chili - 2 tablespoons

Ginger - 1 tablespoon

Salt - 1/4 teaspoon

Water - 30 milliliters

Lemon juice - 1 tablespoon

Tofu - 350 grams

Hung curd - 100 grams

Kitchen king masala - 1 teaspoon

Paprika- 1 teaspoon

Salt - 1/2 teaspoon

Garlic - 1 tablespoon

Coriander - 1 tablespoon

Mayonnaise - 100 grams

Mango pickle masala - 2 tablespoons

All purpose flour - for dusting

 

(For Assembling )

Lettuce - 40 grams

Purple cabbage - 40 grams

Green chili - 2 tablespoons

Onion - 40 grams

Feta cheese - 40 grams

 

 

PREPARATION

  1. In a bowl, add 280 grams all purpose flour, 1 tablespoon sugar, 1 teaspoon salt, 1/4 teaspoon baking powder, 1 teaspoon baking soda, 30 grams curd, 1 tablespoons oil and  60 milliliters water.
  2. Mix and knead it to make a smooth dough.
  3. Rest the dough for 1 hour.
  4. In another bowl, add 20 grams coriander, 2 tablespoons green chili, 1 tablepsoon ginger, 1/4 teaspoon salt, 30 milliliters water and 1 tablespoon lemon juice.
  5. Transfer in a blender and blend to a smooth mixture. Keep aside.
  6. In a bowl, add 350 grams tofu, 100 grams hung curd, 1 teaspoon kitchen king masala, 1 teaspoon paprika, 1/2 teaspoon salt, 1 tablespoon garlic, 1 tablespoon coriander and blended mixture.
  7. Mix all the ingredients and marinate for 30 minutes.
  8. Transfer the marinated tofu in the baking tray.
  9. Bake it at  350°F/180°C for 20-25 minutes.
  10. Now, In a bowl, add 100 grams mayonnaise and 2 tablespoons mango pickle masala.
  11. Mix well and keep aside.
  12. Take a small ball from dough, dust some flour to avoid it from sticking and flatten it with a help of rolling pin.
  13. Now, place it on a hot griddle and cook from both sides.
  14. Place it on a flat surface and spread prepared mayonnaise mixture on pita bread.
  15. Then add lettuce, purple cabbage, green chili, onion slices, baked tofu and feta cheese.
  16. Now, wrap it to make roll and tie a knot with thread.
  17. Serve immediately.
