Challah French Toast

Servings - 6

INGREDIENTS
Warm water - 100 milliliters
Sugar - 1 tablespoon
Dry yeast - 2 teaspoons
All purpose flour - 280 grams 
Salt - 1/4 teaspoon
Eggs - 2
Oil - 1 tablespoon
All purpose flour - for dusting 
Egg wash - for brushing
Milk - 300 milliliters
Egg - 1
Maple syrup - 50 grams 
Vanilla extract - 1 teaspoon
Cinnamon powder - 1/2 teaspoon
Salt - 1/4 teaspoon
Butter - for greasing
Butter - for garnishing
Maple syrup - for garnishing 
Blueberry - for garnishing

PREPARATION


1. In a bowl, add 100 milliliters warm water, 1 tablespoon sugar and whisk well. Add 2 teaspoons dry yeast and whisk well to combine. Cover and rest for 10 - 15 minutes.
2. In a separate bowl, add 280 grams all purpose flour, yeast mixture, 1/4 teaspoon salt, and 2 eggs. Mix well to combine.
3. Add 1 tablespoon oil and knead into a smooth dough. Cover with cling wrap and rest for 2 hours.
4. Once rested, place the dough on a floured surface and divide it into equal portions.
5. Roll each portion into long ropes. Braid them together, tucking the ends underneath. Transfer this into a baking dish and rest for 15 minutes.
6. Once rest, brush the top with egg wash.
7. Preheat the oven to 356°F/180°C and bake for 30 minutes. Remove from the oven and cool for 30 minutes.
8. In a dish, add 300 milliliters milk, 1 egg, 50 grams maple syrup, 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon powder, and 1/2 teaspoon salt. Mix well to combine and keep aside.
9. Slice the cooled challah bread. Dip each slice into the milk mixture and place it on a butter-greased pan. Cook on both sides until golden brown.
10. Transfer to a serving plate and garnish with butter, maple syrup, and blueberries.
11. Serve.
