Cheesy Potato Wedges

 

Servings - 2 - 3

 

INGREDIENTS

Water - 1.5 litres

Salt - 1 teaspoon

Potatoes - 550 grams

Paprika - to taste

Salt - to taste

Oil - to taste

Butter - 45 grams

All purpose flour - 30 grams

Milk - 500 milliliters

Sour cream - 150 milliliters

Pizza sauce - 1 tablespoon

Jalapeno pickle - 2 tablespoons

Mozzarella cheese - 100 grams

Salt - 1 teaspoon

Mozzarella cheese

Chilli flakes - to taste

Coriander - for garnishing

 

PREPARATION

  1. Take a skillet, add 1.5 litres water, 1 teaspoon salt and mix it well.
  2. Then, add 550 grams potatoes and mix it well.
  3. Cover it with lid and cook for about 5 - 6 minutes on medium heat.
  4. Open the lid and remove it from heat.
  5. Transfer this onto a baking tray.
  6. Sprinkle some paprika and salt over it.
  7. Add some oil on top of it.
  8. Preheat the oven to 400°F/200°C. Bake for about 30 minutes.
  9. Remove it from oven.
  10. Heat 45 grams butter in a pan, add 30 grams all purpose flour and mix it well.
  11. Then, add 500 milliliters milk and mix it well.
  12. Bring it to a boil.
  13. Add 150 milliliters sour cream and mix it well.
  14. Add 1 tablespoon pizza sauce, 2 tablespoons jalapeño pickle and mix it well.
  15. Now, add 100 grams mozzarella cheese, 1 teaspoon salt and mix it well.
  16. Cook for 5 - 7 minutes on medium heat.
  17. Remove it from heat and keep aside.
  18. Take a baking dish and add some mozzarella cheese on it.
  19. Then, add the baked potatoes on it.
  20. Drizzle some prepared cheese sauce on top of it.
  21. Now, add some mozzarella cheese on it.
  22. Sprinkle some chilli flakes on top of it.
  23. Preheat the oven to 400°F/200°C. Bake for about 15 minutes.
  24. Remove it from oven.
  25. Garnish with coriander.
  26. Serve hot.
