Cheesy Vada Pav

Servings - 3 - 4

INGREDIENTS

Oil - 2 tablespoons

Asafoetida - 1/4 teaspoon

Mustard seeds - 1/2 teaspoon

Curry leaves - 7 - 8

Turmeric - 1/2 teaspoon

Garlic - 1 teaspoon

Green chili - 1 teaspoon

Boiled mashed potatoes - 400 grams

Salt - 1 teaspoon

Lemon juice - 1 tablespoon

Coriander - 2 tablespoons

Mozzarella cheese - to taste

Gram flour - 150 grams

Salt - 1/2 teaspoon

Turmeric - 1/2 teaspoon

Red chili - 1/2 teaspoon

Baking soda - 1/4 teaspoon

Asafoetida - 1/4 teaspoon

Water - 300 milliliters

Garlic chutney

Green chutney

PREPARATION

1. Heat 2 tablespoons oil in a skillet, add 1/4 teaspoon asafoetida, 1/2 teaspoon mustard seeds, 7 - 8 curry leaves, 1/2 teaspoon turmeric and stir well.

2. Add 1 teaspoon garlic, 1 teaspoon green chili and saute for 2 - 3 minutes.

3. Now, add 400 grams boiled mashed potatoes and mix it well.

4. Then, add 1 teaspoon salt, 1 tablespoon lemon juice, 2 tablespoons coriander and mix it well.

5. Transfer this mixture into a bowl.

6. Take a small portion of the mixture and flatten them with your palm, stuff some mozzarella cheese in it.

7. Make small balls and set aside.

8. In a mixing bowl, add 150 grams gram flour, 1/2 teaspoon salt, 1/2 teaspoon turmeric, 1/2 teaspoon red chili, 1/4 teaspoon baking soda, 1/4 teaspoon asafoetida, 300 milliliters water and mix it well to make a thick batter.

9. Dip the vada in the batter.

10. Heat sufficient oil in a pot and deep fry these until golden brown. Drain it on an absorbent paper.

11. Take a pav, cut it into half. Spread green chutney and garlic chutney on vada pav.

12. Place the vada in it.

13. Garnish with green chili.

14. Serve.
