Chilli Momos Kathi Roll

Servings - 7

INGREDIENTS

All purpose flour - 150 grams
Salt - 1/2 teaspoon
Oil - 2 teaspoons
Water - 100 milliliters
Oil - 1 tablespoon
Garlic - 2 teaspoons
Ginger - 2 teaspoons
Onions - 50 grams
Carrots - 40 grams
Cabbage - 50 grams
Salt - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Soy sauce - 1/2 teaspoon
Vinegar - 1/2 teaspoon
Oil - for frying
Oil - 1 tablespoon
Garlic - 1 teaspoon
Ginger - 1 teaspoon
Onions - 40 grams
Bell pepper - 80 grams
Salt - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Sugar - 1/2 teaspoon
Soy sauce - 1 teaspoon
Vinegar - 1 teaspoon
Ketchup - 2 tablespoons
Red chilli sauce - 1 tablespoon
Water - 150 milliliters
Corn flour - 1 tablespoon
Water - 50 milliliters
Spring onions - 2 teaspoons
All purpose flour - 150 grams
Salt - 1/2 teaspoon
Oil - 2 teaspoons
Water - 100 milliliters
Oil - for brushing
Green chilli sauce - to taste
Onions - to taste

PREPARATION


1. In a bowl, add 150 grams all purpose flour, 1/2 teaspoon salt, 2 teaspoons oil, 100 milliliters water and knead it into a smooth soft dough.
2. Rest the dough for 15 minutes.
3. Heat 1 tablespoon oil in a pan, add 2 teaspoons garlic, 2 teaspoons ginger and stir for 1 - 2 minutes.
4. Then, add 50 grams onions and fry till translucent or until it turns golden brown in color.
5. Now, add 40 grams carrots, 50 grams cabbage and mix it well.
6. Cook for 5 - 7 minutes on medium heat.
7. Add 1/4 teaspoon salt, 1/4 teaspoon black pepper and mix it well.
8. Add 1/2 teaspoon soy sauce, 1/2 teaspoon vinegar and mix it well.
9. Cook for 5 - 7 minutes on medium heat.
10. Remove it from heat and keep aside.
11. Take a ball from dough and flatten it with the help of a rolling pin.
12. Add some prepared stuffing on it and shape it into a momo.
13. Place it in a steamer and steam for about 10 minutes.
14. Open the lid and remove it from steamer.
15. Heat sufficient oil in a skillet and deep fry these until golden brown and crispy.
16. Drain it on an absorbent paper and keep aside.
17. Heat 1 tablespoon oil in a skillet, add 1 teaspoon garlic, 1 teaspoon ginger and stir well.
18. Then, add 40 grams onions and fry till translucent to until it turns golden brown in color.
19. Now, add 80 grams bell pepper and mix it well.
20. Cook for 5 - 7 minutes on medium heat.
21. Add 1/4 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon sugar, 1 teaspoon soy sauce, 1 teaspoon vinegar, 2 tablespoons ketchup, 1 tablespoon red chilli sauce and mix it well.
22. Add 150 milliliters water and mix it well.
23. Bring it to a boil.
24. In a bowl, add 1 tablespoon corn flour, 50 milliliters water and mix it well.
25. Pour the batter into the skillet and mix it well.
26. Cook for 5 - 7 minutes on medium heat.
27. Now, add the fried momos and mix it well.
28. Add 2 teaspoons spring onions and mix it well.
29. Cook for another 3 - 5 minutes on medium heat.
30. Remove it from heat and keep aside.
31. In a bowl, add 150 grams all purpose flour, 1/2 teaspoon salt, 2 teaspoons oil, 100 milliliters water and knead it into a smooth soft dough.
32. Rest the dough for 15 minutes.
33. Take a ball from dough and flatten it with the help of a rolling pin.
34. Place it on a hot tawa and cook on moderate heat for 2 - 3 minutes. Flip it gently.
35. Brush it with oil.
36. Cook until it turns golden brown in color from both sides.
37. Place it on a board and add some green chilli sauce on it and spread it evenly.
38. Now, add the prepared momos on it.
39. Add some onion slices on top of it.
40. Roll it tightly.
41. Cover it with aluminium foil.
42. Serve.
