Crispy Potatoes

Servings - 7

INGREDIENTS
Water - 1 litre
Salt - 1/2 teaspoon
Potatoes - 600 grams
Corn flour - 25 grams 
Black pepper - 1/4 teaspoon
Garlic powder - 2 teaspoons
Paprika - 1 teaspoon
Salt - 1 teaspoon
Parsley - 2 tablespoons
Corn flour - for dusting
Oil - for frying

 

PREPARATION


1. Add 1 litre water to a pan, add 1/2 teaspoon salt and 600 grams potatoes. Boil for 10 - 12 minutes.
2. Remove from heat and strain the potatoes. Keep aside.
3. Add boiled potatoes in a bowl and mash thoroughly using a food masher.
4. Add 25 grams corn flour, 1/4 teaspoon black pepper, 2 teaspoons garlic powder, 1 teaspoon paprika, 1 teaspoon salt and 2 tablespoons parsley. Mix well to combine. Refrigerate for 10 - 15 minutes.
5. Dust some cornflour on a board, place a portion of the potato mixture on it, and gently flatten.
6. Use a heart-shaped mould to cut the flattened mixture into heart shapes.
7. Heat sufficient oil in a skillet and fry these until golden brown and crispy.
8. Remove from heat and drain on absorbent paper.
9. Serve.
