Boiled eggs - 6
Ginger - 1 teaspoon
Garlic - 1 teaspoon
Red chili - 1 tablespoon
Garam masala - 1/2 teaspoon

Bread crumbs - 3 tablespoons

Corn flour - 2 tablespoons
Oil - for frying
Oil - 2 tablespoons
Ginger - 1 teaspoon
Garlic - 1 teaspoon
Curry leaves - 8 - 10
Green chili - 3 - 4
Yogurt - 2 tablespoons
Red chili - 1/2 teaspoon
Garam masala - 1/2 teaspoon
Chilli sauce - 1 tablespoon
PREPARATION
1. Take 6 boiled eggs remove the yolk from it and cut the egg whites into small pieces. Transfer them into a bowl.
2. Add 1 teaspoon ginger, 1 teaspoon garlic, 1 tablespoon red chili, 1/2 teaspoon garam masala, 1 teaspoon salt, 3 tablespoons bread crumbs, 1 egg white, 2 tablespoons corn flour and mix all
the ingredients well.
3. Heat sufficient oil in a heavy skillet and deep fry these until golden brown and crisp. Drain it on an absorbent paper and keep aside.
4. Heat 2 tablespoons oil in a pan, add 1 teaspoon ginger, 1 teaspoon garlic, 8 - 10 curry leaves, 3 - 4 green chili and saute for 3 - 5 minutes.
5. Add 2 tablespoons yogurt, 1/2 teaspoon red chili and mix it well.
6. Add 1/2 teaspoon garam masala, 1 tablespoon chilli sauce and mix it again.
7. Now, add the fried eggs in it and mix it well.
8. Serve hot.
