Egg Bhuna Roll

INGREDIENTS

Oil - 60 milliliters
Cumin - 1 teaspoon
Onion paste - 170 grams
Red chili paste - 1 tablespoon
Garlic paste - 1 tablespoon
Ginger paste - 1 tablespoon
Curd - 80 grams
Turmeric - 1 teaspoon
Cumin powder - 1 teaspoon
Coriander powder - 1 teaspoon
Salt - 1 teaspoon
Tomato puree - 200 grams
Boiled eggs - 6
Eggs - 3
Salt - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Butter - 1 tablespoon
Wheat flour - 250 grams
Salt - 1/2 teaspoon
Ghee - 40 milliliters
Water - 200 milliliters
Onions - to taste
Chaat masala - to taste
Oil - for frying
Coriander - 30 grams
Mint - 50 grams
Garlic - 1 1/2 tablespoons
Green chili - 2 tablespoons
Onions - 50 grams
Chaat masala - 1 teaspoon
Salt - 1 teaspoon
PREPARATION
1. Heat 60 milliliters oil in a skillet, add 1 teaspoon cumin and stir well.
2. Then, add 170 grams onions paste and mix it well.
3. Cook until it turns golden brown in color.
4. Add 1 tablespoon red chili paste, 1 tablespoon garlic paste, 1 tablespoon ginger paste and mix it well.
5. Now, add 80 grams curd and mix it well.
6. Cook for 3 - 5 min Utes on medium heat.
7. Add 1 teaspoon turmeric, 1 teaspoon cumin powder, 1 teaspoon coriander powder, 1 teaspoon salt and mix it well.
8. Then, add 200 grams tomato puree and mix it well.
9. Cook for 3 - 5 minutes on medium heat.
10. Now, add 6 boiled eggs and mix it well.
11. Cook for another 3 - 5 minutes on medium heat.
12. Remove it from heat and keep aside.
13. In a mixing bowl, add 3 eggs, 1/4 teaspoon salt, 1/4 teaspoon black pepper and whisk it well.
14. Heat1 tablespoon butter in a pan, add the egg mixture in it.
15. Cook on moderate heat for 2 - 3 minutes and flip it gently.
16. Cook for another 3 - 5 minutes on medium heat and cut it into pieces.
17. Remove it from heat.
18. In a mixing bowl, add 250 grams wheat flour, 1/2 teaspoon salt, 40 milliliters ghee and mix it well.
19. Add 200 milliliters water and knead it into a smooth soft dough.
20. Rest the dough for 20 - 25 minutes.
21. Take a ball from dough and flatten it with the help of a rolling pin.
22. Place the omelette piece on it.
23. Add the prepared egg mixture on it.
24. Add some onions and sprinkle chaat masala on it.
25. Fold the sides and roll it tightly.
26. Heat some oil in a pan and fry until it turns golden brown in color from all sides.
27. Remove it from heat and drain it on an absorbent paper.
28. In a blender, add 30 grams coriander, 50 grams mint, 1 1/2 tablespoons garlic, 2 tablespoons green chili, 50 grams onions, 1 teaspoon chaat masala, 1 teaspoon salt
and blend it into smooth puree.
29. Serve prepared egg roll with prepared chutney.
