Flattened rice - 200 grams
Water
Oil - 1 tablespoon
Paneer - 170 grams
Oil - 20 milliliters
Mustard seeds - 1 teaspoon
Cumin seeds - 1 teaspoon
Green chili - 1 teaspoon
Curry leaves - 6 - 7
Cashew - 1 tablespoon
Onions - 55 grams
Salt - 1 teaspoon
Turmeric - 1/4 teaspoon
Sugar - 1 teaspoon
Lemon juice - 2 teaspoons
Coriander - 1 tablespoon
PREPARATION
1. Take a bowl and place a stainer on it.
2. Add 200 grams flattened rice and wash it with water. Keep aside.
3. Heat 1 tablespoon oil in a pan, add 170 grams paneer and mix it well.
4. Cook for 8 - 10 minutes on medium heat or until it turns golden brown in color from all sides.
5. Remove it from heat and keep aside.
6. Heat 20 milliliters oil in a skillet, add 1 teaspoon mustard seeds, 1 teaspoon cumin seeds, 1 teaspoon green chili, 6 - 7 curry leaves, 1 tablespoon cashew and stir for 2 - 3 minutes.
7. Then, add 55 grams onions and fry till translucent or until it turns golden brown in color.
8. Add 1 teaspoon salt, 1/4 teaspoon turmeric and stir well.
9. Now, add the washed flattened rice and mix it well.
10. Cook for 5 - 7 minutes on medium heat.
11. Add 1 teaspoon sugar, 2 teaspoons lemon juice and mix it well.
12. Add 1 tablespoon coriander and mix it well.
13. Cook for another 3 - 5 minutes on medium heat.
14. Remove it from heat.
15. Garnish with coriander.
16. Serve.
