Frankie Wrap

 

Servings - 3

 

INGREDIENTS
Butter - 20 grams

Cumin seeds - 1/4 teaspoon

Garlic - 1 tablespoon

Ginger - 1 tablespoon

Green chili - 2 teaspoons

Salt - 1/2 teaspoon

Red chili - 1/2 teaspoon

Turmeric - 1/2 teaspoon

Coriander powder - 1/2 teaspoon

Cumin powder - 1/2 teaspoon

Garam masala - 1/2 teaspoon

Red chilli sauce - 1 teaspoon

Ketchup - 1 tablespoon

Water - 40 milliliters

Boiled mashed potatoes - 220 grams

Coriander - 2 tablespoons

Vinegar - 60 milliliters

Green chili - 1 tablespoon

Wheat flour - 250 grams

All purpose flour - 100 grams

Salt - 1/4 teaspoon

Oil - 1 tablespoon

Warm water - 300 milliliters

Cabbage - to taste

Schezwan sauce - to taste

Onions - to taste

Mozzarella cheese - to taste

Frankie masala - to taste

 

PREPARATION

  1. Heat 20 grams butter in a skillet, add 1/4 teaspoon cumin seeds, 1 tablespoon garlic, 1 tablespoon ginger, 2 teaspoons green chili and stir for 1 - 2 minutes.
  2. Add 1/2 teaspoon salt, 1/2 teaspoon red chili, 1/2 teaspoon turmeric, 1/2 teaspoon coriander powder, 1/2 teaspoon cumin powder, 1/2 teaspoon garam masala and mix it well.
  3. Add 1 teaspoon red chilli sauce, 1 tablespoon ketchup and mix it well.
  4. Cook for 2 - 3 minutes on medium heat.
  5. Add 40 milliliters water and mix it well.
  6. Then, add 220 grams boiled mashed potatoes and mix it well.
  7. Cook for 5 - 7 minutes on medium heat.
  8. Add 2 tablespoons coriander and mix it well.
  9. Cook for another 2 - 3 minutes on medium heat.
  10. Remove it from heat and keep aside.
  11. In a bowl, add 60 milliliters vinegar, 1 tablespoon green chili and mix it well. Keep aside.
  12. In a mixing bowl, add 250 grams wheat flour, 100 grams all purpose flour, 1/2 teaspoon salt, 1 tablespoon oil and mix it well.
  13. Add 300 milliliters warm water and knead it into a smooth soft dough.
  14. Rest the dough for 10 minutes.
  15. Take a ball from dough and flatten it with the help of a rolling pin.
  16. Place it on a hot tawa and cook on moderate heat for 2 - 3 minutes.
  17. Flip it gently.
  18. Cook until it turns golden brown in color from both sides.
  19. Place the tortilla on a board.
  20. Make a cut outwards to the edge of the tortilla. 
  21. Add the prepared potato mixture and spread it evenly.
  22. Add some cabbage on it.
  23. On the other side add some schezwan sauce on it and spread it evenly.
  24. Top with onions and in the end add some mozzarella cheese on it.
  25. Add the prepared green chili on it and sprinkle some frankie masala on top of it.
  26. Now, start by folding the wrap from the left side of your cut and flip and flip again until you have a completely folded tortilla. 
  27. Heat some butter on a pan, add the prepared wrap on it and cook until it turns dark brown in color from both sides.
  28. Remove it from heat and cut it into half.
  29. Serve.
