Fried Egg Momos

INGREDIENTS

All purpose flour - 200 grams

Salt - 1 teaspoon

Water - 140 milliliters

Oil - 1 tablespoon
Egg powder - 70 grams

Water - 100 milliliters

Oil - 25 milliliters

Onions - 90 grams

Green chili - 1 tablespoons

Salt - 1/2 teaspoon

Red chili - 1/2 teaspoon

Garam masala - 1/2 teaspoon

Black pepper - 1/4 teaspoon

Coriander powder - 1 teaspoon

Oil - 2 teaspoons

Ginger garlic paste - 1 teaspoon

Green beans - 50 grams

Bell pepper - 45 grams

Carrots - 55 grams

Salt - 1/2 teaspoon

Red chili sauce - 1 tablespoon

Vinegar - 2 teaspoons

Soy sauce - 2 teaspoons

Spring onions - 20 grams

Oil - for frying

 

PREPARATION

  1. In a mixing bowl, add 200 grams all purpose flour, 1 teaspoon salt, 140 milliliters, water, 1 tablespoon oil and knead it into a smooth soft dough.
  2. Rest for 20 minutes.
  3. Now, in a another mixing bowl, add 70 grams egg powder, 100 milliliters water and mix it well.
  4. Heat 25 milliliters oil in a pan, add 90 grams onions and fry till translucent or until it turns golden brown in color.
  5. Add 1 tablespoon green chili, 1/2 teaspoon salt, 1/2 teaspoon red chili, 1/2 teaspoon garam masala, 1/4 teaspoon black pepper, 1 teaspoon coriander powder and mix it well.
  6. Now, add prepared egg mixture and cook for 3 - 5 minutes.
  7. Then, heat 2 teaspoons oil in a pan, add 1 teaspoon ginger garlic paste and saute for 1 - 2 minutes.
  8. Add 50 grams green beans, 45 grams bell pepper, 55 grams carrots and cook for 3 - 5 minutes.
  9. Now, add 1/2 teaspoon salt, 1 tablespoon red chili sauce, 2 teaspoons vinegar, 2 teaspoons soy sauce and mix it well.
  10. Now add prepared egg mixture, 20 grams spring onions and mix it.
  11. Then, take a ball from dough and flatten it with the help of rolling pin.
  12. Add prepared mixture on it.
  13. Shape it into momos.
  14. Place the momos in a steamer and steam for 10 minutes.
  15. Remove it from the steamer.
  16. Heat sufficient oil in a heavy skillet and deep fry these until golden brown and crispy.
  17. Serve with chili garlic sauce.
