General Tso’s Cauliflower

Servings - 2 - 3

INGREDIENTS

Cauliflower - 470 grams

All purpose flour - 135 grams

Corn starch - 75 grams

Baking powder - 1 1/2 teaspoons

Salt - 2 teaspoons

Eggs - 4

Water - 150 milliliters

Oil - for frying

Oil - 2 tablespoons

Garlic paste - 1 teaspoon

Ginger paste - 1 teaspoon

Vegetable broth - 110 milliliters

Soy sauce - 110 milliliters

Rice vinegar - 80 milliliters

Sugar - 60 grams

Tomato paste - 2 tablespoons

Corn starch - 2 tablespoons

Water - 2 tablespoons

Sesame seeds - for garnishing

Spring onions - for garnishing

PREPARATION

1. In a mixing bowl, add 135 grams all purpose flour, 75 grams corn starch, 1 1/2 teaspoons baking soda, 2 teaspoons salt, 4 eggs, 150 milliliters water and mix it well to make a thick batter.

2. Take a cauliflower floret and dip it in all purpose flour mixture.

3. Heat sufficient oil in a heavy skillet and deep fry these till golden brown and crispy.

4. Heat 2 tablespoons oil in a heavy pot, add 1 teaspoon garlic paste, 1 teaspoon ginger paste and saute for 2 - 3 minutes.

5. Add 110 milliliters vegetable broth, 110 milliliters soy sauce, 80 milliliters rice vinegar, 60 grams sugar, 2 tablespoons tomato paste and mix it well.

6. Bring it to a boil.

7. Take a bowl add 2 tablespoons corn starch, 2 tablespoons water and mix it well.

8. Pour this mixture into the gravy and mix well.

9. Cook till it becomes thick.

10. Now, add the fried cauliflower in it and mxi it well.

11. Garnish with sesame seeds and spring onions.

12. Serve.
