INGREDIENTS
All purpose flour - 300 grams
Salt - 1/4 teaspoon
Butter - 60 grams
Cold water - 60 milliliters
Butter - 120 grams
Mustard oil - 2 tablespoons
Cumin - 1/2 teaspoon
Onions - 70 grams
Salt - 1 teaspoon
Turmeric powder - 1 teaspoon
Red chili powder - 1/2 teaspoon
Coriander powder - 1/2 teaspoon
Cumin powder - 1/2 teaspoon
Dry mango powder - 1/2 teaspoon
Green chili - 1 tablespoon
Dry fenugreek leaves - 2 tablespoons
Coriander - 2 tablespoons
Boiled mashed potatoes - 350 grams
Butter - for brushing
Milk - for brushing
Cheese slices - to taste
Mayonnaise - to taste
Onion slices - to taste
Tomato slices - to taste
Cucumber slices - to taste
Boiled egg slices - to taste
Green chili - to taste
Coriander - to taste
Chaat masala - to taste
Mustard sauce - to taste
PREPARATION
1. In a mixing bowl, add 300 grams all purpose flour, 1/4 teaspoon salt, 60 grams butter and mix it well.
2. Add 60 milliliters water and knead it into a smooth soft dough.
3. Refrigerate the dough for 15 - 20 minutes.
4. Place the 120 grams butter between two pieces of plastic wrap and pound into a flat disc using a rolling pin and refrigerate for 15 - 20 minutes.
5. Heat 2 tablespoons mustard oil in a heavy skillet, add 1/2 teaspoon cumin and stir well.
6. Then, add 70 grams onions and fry till translucent or until it turns golden brown in color.
7. Add 1 teaspoon salt, 1 teaspoon turmeric powder, 1/2 teaspoon red chili powder, 1/2 teaspoon coriander powder, 1/2 teaspoon cumin powder, 1/2 teaspoon dry mango powder, 1 tablespoon green chili, 2 tablespoons dry fenugreek leaves, 2 tablespoons coriander and mix it well.
8. Cook for 3 - 5 minutes on medium heat.
9. Now, add 350 grams boiled mashed potatoes and mix it well.
10. Cook for 5 - 7 minutes on medium heat.
11. Remove it from heat and keep aside.
12. Take a dough ball and roll out the dough into a large rectangle about 1/2 inch thick. Place the butter in the center and fold the two ends over and refrigerate for 15 - 20 minutes.
13. Take the refrigerated dough and flatten it with the help of a rolling pin.
14. Brush it with butter.
15. Fold the dough and refrigerate for 15 - 20 minutes. Repeat this process 3 times.
16. Now, take dough and flatten it with the help of a rolling pin.
17. Cut it’s sides and divided the dough into equal portions.
18. Add the prepared mixture on it. Brush the sides with milk.
19. Fold the dough and seal the edges.
20. Place it on a baking tray.
21. Preheat the oven to 320°F/160°C. Bake for 15 - 20 minutes.
22. Remove it from oven and place it on a board.
23. Cut it into half.
24. Then, add a cheese slice on it.
25. Spread some mayonnaise on top of it.
26. On the other side, add some onion slices, tomato slices, cucumber slices and boiled egg slices.
27. Garnish with green chili and coriander.
28. Sprinkle some chaat masala on it.
29. Drizzle some mustard sauce on top of it.
30. Place the another side on top of it.
31. Cut it into half.
32. Serve.
