 Hariyali Pav Bhaji

INGREDIENTS

Water - 500 milliliters

Spinach - 165 grams

Cold water - 850 milliliters

Coriander - 10 grams

Green chili - 2

Bell pepper - 115 grams

Tomato - 130 grams

Cauliflower - 130 grams

Green peas - 100 grams

Salt - 1 teaspoon

Pav bhaji masala - 1 teaspoon

Butter - 1 tablespoon

Boiled mashed potatoes - 370 grams

Oil - 30 milliliters

Butter - 1 tablespoon

Cumin - 1 teaspoon

Ginger paste - 1 teaspoon

Garlic paste - 1 teaspoon

Onions - 110 grams

Salt - 1/2 teaspoon

Pav bhaji masala - 1 1/2 teaspoons

Red chili - 1 teaspoon

Garam masala - 1/2 teaspoon

Water - 300 milliliters, divided

Lemon juice - 30 milliliters

Butter - 1 teaspoon

Coriander - 2 teaspoons

Pav bhaji masala - 1/4 teaspoon

Pav buns

PREPARATION

1. Take a skillet, add 500 milliliters water, 165 grams spinach and mix it well.

2. Boil for about 5 minutes on medium heat.

3. Remove it from hot water and transfer this into a bowl filled with cold water.

4. Soak for 2 - 3 minutes.

5. Transfer this into a blender, add 10 grams coriander, 2 green chili and blend it into a smooth puree.

6. Take a skillet, add 115 grams bell pepper, 130 grams tomato and mix it well.

7. Cook for 5 - 7 minutes on medium heat.

8. Then, add 130 grams cauliflower, 100 grams green peas and mix it well.

9. Cook for another 5 - 7 minutes on medium heat.

10. Add 1 teaspoon salt, 1 teaspoon pav bhaji masala and mix it well.

11. Add 1 tablespoon butter and mix it well.

12. Now, add 370 grams boiled mashed potatoes and mix it well.

13. Cook for 5 - 7 minutes on medium heat.

14. Remove it from heat and keep aside.

15. Heat 30 milliliters oil, 1 tablespoon butter in a heavy skillet, add 1 teaspoon cumin, 1 teaspoon ginger paste, 1 teaspoon garlic paste and stir for 1 -2. minutes.

16. Then, add 110 grams onions and fry till translucent or until it turns golden brown in color.

17. Add 1/2 teaspoon salt, 1 1/2 teaspoons pav bhaji masala, 1 teaspoon red chili, 1/2 teaspoon garam masala and mix it well.

18. Now, add the prepared veggie mixture and mix it well.

19. Cook for 3 - 5 minutes on medium heat.

20. Add the blended spinach puree and mix it well.

21. Then, add 100 milliliters water and mix it well.

22. Mash the mixture with the help of a food masher.

23. Add 200 milliliters water and mix it well.

24. Mash it again.

25. Add 30 milliliters lemon juice and mix it again.

26. Cook for 3 - 5 minutes on medium heat.

27. Remove it from heat.

28. Heat 1 teaspoon butter in a pan, add 2 teaspoons coriander, 1/4 teaspoon pav bhaji masala and stir well.

29. Then, add the pav buns on it and cook for 2 - 3 minutes from both sides.

30. Remove it from heat.

31. Serve with prepared bhaji.
