 Homemade Veg Subway Sandwich

Servings - 2

INGREDIENTS

(For Dough)

Yeast - 1 1/2 teaspoons

Salt - 1 teaspoon

Sugar - 1 teaspoon

Warm water - 80 milliliters

All purpose flour - 300 grams

Wheat flour - 1 tablespoon

Oil - 50 milliliters

Warm water - 80 milliliters

(Parmesan Oregano Sprinkle)

Garlic powder - 1/2 tablespoon

Salt - 1/4 teaspoon

Oregano - 1 teaspoon

Basil - 1/2 teaspoon

Parmesan cheese - 2 tablespoons

(Sweet Corn & Green Peas Mixture)

Mayonnaise - 90 grams

Salt - 1/2 teaspoon

Black pepper - 1/2 teaspoon

Sweet corn - 40 grams

Green peas - 45 grams

Carrot - 45 grams

Water

(Assembling)

Cheese slices - to taste

Lettuce - to taste

Tomato slices - to taste

Cucumber slices - to taste

Bell pepper - to taste

Onion slices - to taste

Black olives - to taste

Jalapeno - to taste

Mayonnaise - to taste

Chipotle sauce - to taste

Harissa mayonnaise - to taste

Barbecue sauce - to taste

Red chili sauce - to taste

PREPARATION

(For Dough)

1. In a mixing bowl, add 1 1/2 teaspoons yeast, 1 teaspoon salt, 1 teaspoon sugar, 80 milliliters warm water and mix it well.

2. Add 300 grams all purpose flour, 1 tablespoon wheat flour, 50 milliliters oil and mix it well.

3. Add 80 milliliters warm water and knead it into a smooth soft dough.

4. Rest the dough for 2 - 3 hours.

(Parmesan Oregano Sprinkle)

1. In bowl, add 1/2 tablespoon garlic powder, 1/4 teaspoon salt, 1 teaspoon oregano, 1/2 teaspoon basil, 2 tablespoons parmesan cheese and mix it well. Keep aside.

(Sweet Corn & Green Peas Mixture)

1. In a mixing bowl, add 90 grams mayonnaise, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 40 grams sweet corn, 45 grams green peas, 45 grams carrot and mix all the ingredients well. Keep aside.

(Rest of the Preparation)

1. Lightly flour the surface.Divide the dough into equal portions.

2. Roll them into cylindrical shapes.

3. If you see in subway they have baguette tray for making the dough rise in an specific direction. Since its not easily available.

4. Place them in a tray. (you can place aluminium foil rolls or parchment paper or cling wrap rolls). (See Video)

5. Rest them for 45 minutes.

6. Brush the top of bread with water and sprinkle parmesan and oregano mixture on top of it.

7. Cut the bread to open it up.

8. Preheat the oven to 350°F/180°C. Bake for 20 - 25 minutes.

9. Remove it from oven and let it cool.

(Assembling)

1. Cut it cut it from the centre. Place 2 cheese slices on the lower side of bread.

2. Preheat the oven to 350°F/180°C. Bake for 5 minutes.

3. Place lettuce, tomato slices, cucumber slices, bell pepper, onion slices, black olives, jalapeños over it.

4. Put mayonnaise, chipotle sauce, harissa mayonnaise, barbecue sauce, red chili sauce evenly over it.

5. Sandwich it with the upper side of the bread and press it lightly.

6. Serve immediately.
