Idli Upma

INGREDIENTS

Semolina - 150 grams

Yogurt - 150 grams

Salt - 1 teaspoon

Water - 100 milliliters

Fruit salt - 1 teaspoon

Water - 2 tablespoons

Oil - for greasing

Water - for steaming

Oil - 1 tablespoon

Mustard seeds - 1 teaspoon

White lentils - 1 teaspoon

Split bengal gram - 1 teaspoon

Dry red chili - 1

Cashews - 1 tablespoon

Curry leaves - 6 - 7

Green chili - 1

Ginger - 2 teaspoons

Asafoetida - 1/4 teaspoon

Onions - 50 grams

Carrots - 50 grams

Bell pepper - 50 grams

Turmeric - 1/8 teaspoon

Water - 45 milliliters

Salt - 1 teaspoon

Lemon juice - 1 tablespoon

 

PREPARATION

  1. In a bowl, add 150 grams semolina, 150 grams yogurt, 1 teaspoon salt and mix it well.
  2. Add 100 milliliters water and mix it well to make a thick batter.
  3. Rest the batter for 15 - 20 minutes.
  4. Add 1 teaspoon fruit salt, 2 tablespoons water and mix it well.
  5. Pour the batter into the greased idli maker.
  6. Heat some water in a heavy skillet, place the idli maker in it and cover it with lid.
  7. Steam for about 15 minutes.
  8. Open the lid and remove it from heat.
  9. Remove the idli from it.
  10. Crumbled the idli properly and keep aside.
  11. Heat 1 tablespoon oil in a skillet, add 1 teaspoon mustard seeds, 1 teaspoon white lentils, 1 teaspoon split bengal gram, 1 dry red chili, 1 tablespoon cashews and stir for 2 - 3 minutes or until it turns golden brown in color.
  12. Add 6 - 7 curry leaves, 1 green chili, 2 teaspoons ginger, 1/4 teaspoon asafoetida and stir well.
  13. Then, add 50 grams onions and fry till translucent or until it turns golden brown in color.
  14. Now, add 50 grams carrots, 50 grams bell pepper and mix it well.
  15. Cook for 5 - 7 minutes on medium heat.
  16. Add 1/8 teaspoon turmeric and stir well.
  17. Add 45 milliliters water and mix it well.
  18. Cover it with lid and cook for about 8 - 10 minutes on medium heat.
  19. Open the lid and give it a nice stir.
  20. Add 1 teaspoon salt and mix it well.
  21. Now, add the crumbled idli and mix it well.
  22. Cook for 5 - 7 minutes on medium heat.
  23. Add 1 tablespoon lemon juice and mix it again.
  24. Cook for another 3 - 5 minutes on medium heat.
  25. Remove it from heat.
  26. Serve hot.
