Irish Potato Bites

INGREDIENTS
Boiled potatoes - 700 grams
Chicken - 140 grams
Salt - 1/2 teaspoon
Butter - 1 tablespoon
Mozzarella cheese - 40 grams
Sour cream - to taste
Green onions - for garnishing
PREPARATION
1. Take a boiled potato and cut each one in half and cut a small slice off of the rounded end so the potato can sit up.
2. Scoop out the inside of each potato half saving the potato insides in a bowl.
3. Add 140 grams chicken, 1/2 teaspoon salt, 1 tablespoon butter, 40 grams mozzarella cheese and mix well to combine.
4. Fill the mixture into potato halves and then place them on a baking sheet.
5. Preheat the oven to 400°F/200°C. Bake for 10 - 15 minutes.
6. Garnish with sour cream and green onions.
7. Serve.
