Kanda Bhaji Pav

INGREDIENTS


Onions - 200 grams

Salt - 1 1/2 teaspoons

Coriander powder - 1 teaspoon

Carom seeds - 1/2 teaspoon

Red chili - 1/2 teaspoon

Garam masala - 1 teaspoon

Chaat masala - 1 teaspoon

Turmeric - 1 teaspoon

Gram flour - 150 grams

Curry leaves - 8 - 10

Water - 200 milliliters

Oil - 1 teaspoon

Garlic - 2 tablespoons

Roasted sesame seeds - 2 teaspoons

Desiccated coconut - 75 grams

Salt - 1/2 teaspoon

Paprika - 1 tablespoon

Dry roasted peanuts - 1 tablespoon

Mint - 25 grams

Coriander - 20 grams

Green chili - 1 tablespoon

Garlic - 1 tablespoon

Salt - 1/2 teaspoon

Chaat masala - 1 teaspoon

Cumin powder - 1/2 teaspoon

Lemon juice - 2 tablespoons

Oil - for frying

Pav buns

 

PREPARATION

1. In a mixing bowl, add 200 grams onions, 1 1/2 teaspoons salt, 1 teaspoon coriander powder, 1/2 teaspoon carom seeds, 1/2 teaspoon red chili, 1 teaspoon garam masala, 1 teaspoon chaat masala, 1 teaspoon turmeric, 150 grams gram flour, 8 - 10 curry leaves and mix it well.

2. Add 200 milliliters water and mix it well. Keep aside.

3. Heat 1 teaspoon oil in a pan, add 2 tablespoons garlic and stir for 2 - 3 minutes.

4. Add 2 teaspoons roasted sesame seeds and mix it well.

5. Then, add 75 grams desiccated coconut and mix it well.

6. Cook for 3 - 5 minutes on medium heat or until it turns golden brown in color.

7. Add 1/2 teaspoon salt, 1 tablespoon paprika and mix it well.

8. Cook for another 3 - 5 minutes on medium heat.

9. Remove it from heat and transfer this into a blender, add 1 tablespoon dry roasted peanuts and blend it well. Keep aside.

10. In a another blender, add 25 grams mint, 20 grams coriander, 1 tablespoon green chili, 1 tablespoon garlic, 1/2 teaspoon salt, 1 teaspoon chaat masala, 1/2 teaspoon cumin powder, 2 tablespoons lemon juice and blend it well. Keep aside.

11. Heat sufficient oil in a heavy skillet and deep the fry the pakoras until it turns golden brown and crispy.

12. Drain it on an absorbent paper. Keep aside.

13. Take a pav bun and cut it into half.

14. Add the prepared green chutney and spread it evenly.

15. Then, sprinkle some prepared red chutney on it.

16. Now, add the prepared pakora on it.

17. Sprinkle some prepared red chutney on it.

18. Close the pav.

19. Serve.
