Khada Pav Bhaji

INGREDIENTS


Water - 1 litre

Carrot - 70 grams

Green peas - 85 grams

Cauliflower - 115 grams

Butter - 2 tablespoons

Cumin - 1/2 teaspoon

Ginger garlic paste - 1 tablespoon

Onions - 110 grams

Tomato - 110 grams

Bell pepper - 80 grams

Boiled mashed potatoes - 300 grams

Turmeric - 1/4 teaspoon

Red chili paste - 2 tablespoons

Red chili powder - 1/4 teaspoon

Salt - 1 teaspoon

Pav bhaji masala - 1 tablespoon

Garam masala - 1/4 teaspoon

Butter - 1 tablespoon

Water - 60 milliliters

Lemon juice - 2 teaspoons

Coriander - 2 tablespoons

Butter - 1/2 tablespoon

Pav bhaji masala - 1/4 teaspoon

Coriander - 1 tablespoon

Pav buns

Butter - to taste

Coriander - for garnishing

PREPARATION

1. Take a pan, add 1 litre water, 70 grams carrot, 85 grams green peas, 115 grams cauliflower and mix it well.

2. Bring it to a boil.

3. Boil for 5 - 7 minutes on medium heat.

4. Remove it from heat and drain the veggies. Keep aside.

5. Heat 2 tablespoons butter in a heavy skillet, add 1/2 teaspoon cumin, 1 tablespoon ginger garlic paste, 110 grams onions and fry till translucent.

6. Then, add 110 grams tomato, 80 grams bell pepper and mix it well.

7. Saute until it turns soft and pulpy.

8. Cook for 5 - 7 minutes on medium heat.

9. Add the boiled veggies and mix it well.

10. Now, add 300 grams boiled mashed potatoes and mix it well.

11. Cook for 5 - 7 minutes on medium heat.

12. Add 1/4 teaspoon turmeric, 2 tablespoons red chili paste, 1/4 teaspoon red chili powder, 1 teaspoon salt, 1 tablespoon pav bhaji masala, 1/4 teaspoon garam masala and mix it well.

13. Then, add 1 tablespoon butter and mix it again.

14. Cook for 3 - 5 minutes on medium heat.

15. Add 60 milliliters water and mix it well.

16. Now, lightly mash the veggies with the help of a food masher.

17. Give it a nice stir.

18. Add 2 teaspoons lemon juice, 2 tablespoons coriander and mix it well.

19. Cook for another 3 - 5 minutes on medium heat.

20. Remove it from heat and keep aside.

21. Heat 1/2 tablespoon butter in a pan, add 1/4 teaspoon pav bhaji masala, 1 tablespoon coriander and stir well.

22. Now, place the pav buns and coat it completely from both sides with the butter mixture.

23. Place the pav buns on a plate.

24. Add the prepared bhaji on the serving plate.

25. Add some butter on it.

26. Garnish with coriander.

27. Serve hot.
