Idli Stir Fry

Servings - 2 - 3

INGREDIENTS

Semolina - 270 grams

Yogurt - 370 grams

Water - 50 milliliters

Salt - 1 teaspoon

Fruit salt - 1 1/2 teaspoons

Water - 1 tablespoon

Oil - for brushing

Oil - for frying

Oil - 1 tablespoon

Dry red chili - 3

Ginger garlic paste - 1 tablespoon

Spring onions - 65 grams

Bell pepper - 105 grams

Chilli sauce - 2 tablespoons

Soy sauce - 1 tablespoon

Salt - 1 teaspoon

Sesame seeds - 1 tablespoon

PREPARATION

1. In a mixing bowl, add 270 grams semolina, 370 grams yogurt, 50 milliliters water, 1 teaspoon salt and mix it well.

2. Rest the mixture for 10 minutes.

3. Add 1 1/2 teaspoons fruit salt, 1 tablespoon water and mix it well again.

4. Grease the idli moulds with oil and pour the idli batter into each greased idli moulds.

5. Steam for 10 - 12 minutes or till the idlis are cooked.

6. Cool slightly and demould. Transfer this into a bowl.

7. Cut it into thin long slices. Keep aside.

8. Heat sufficient oil in a heavy skillet and deep fry these until golden brown and crisp. Drain it on an absorbent paper and keep aside.

9. Heat 1 tablespoon oil in a heavy skillet, add 3 dry red chili, 1 tablespoon ginger garlic paste and stir well.

10. Add 65 grams spring onions and fry for 2 - 3 minutes.

11. Now, add 105 grams bell pepper and saute for 3 - 5 minutes.

12. Add the fried idlis in it and mix it well.

13. Now, add 2 tablespoons chilli sauce, 1 tablespoon soy sauce, 1 teaspoon salt, 1 tablespoon sesame seeds and mix it well.

14. Serve hot.
